Bacon, Tomato, and Avocado Flatbread Recipe

Ingredients
- Cooking spray
- 2 flour tortillas
- 1 cup grated Cheddar cheese
- 1 small tomato, seeded and diced
- cup onion, diced
- 3 slices cooked bacon, crumbled (or more to taste)
- Salt and ground black pepper to taste
- 1 avocado, peeled, pitted, and sliced
- 1 tablespoon chopped fresh cilantro (optional)
- 1 teaspoon ranch dressing (optional)
- 1 teaspoon buffalo ranch dressing (optional)
Directions
- Preheat the oven: Preheat the oven to 375F (190C).
- Prepare the skillet: Spray a large cast iron skillet with cooking spray. Place the skillet over medium heat for about 30 seconds.
- Cook the first tortilla: Add one flour tortilla to the skillet and cook until the bottom is browned and hardened, about 1 minute.
- Add the toppings: Top the tortilla with half of the grated Cheddar cheese, half of the diced tomato, half of the diced onion, and half of the crumbled bacon. Season with salt and pepper.
- Cook until melted: Cook for an additional minute, or until the cheese begins to melt.
- Transfer to the oven: Carefully transfer the skillet to the preheated oven and bake for 2 to 3 minutes, or until the cheese is completely melted.
- Finish the first tortilla: Remove from the oven and top with half of the avocado slices, cilantro (if using), salt, and pepper. Drizzle with ranch and buffalo ranch dressings in a zig-zag pattern.
- Repeat for the second tortilla: Repeat the process with the second tortilla and remaining ingredients.
Cook's Notes
- You can use a baking sheet instead of a cast iron skillet if preferred. For extra crispy tortillas, bake the tortilla for 2 minutes before adding the toppings.
- To make your own buffalo ranch dressing, combine cup of your favorite hot sauce with cup of ranch dressing and mix well. Premade buffalo ranch dressing is also available.
