Sweetbreads Recipe
Ingredients
- 1 pound beef sweetbreads
- 1 cup oil for frying, or as needed
- cup all-purpose flour
- Salt and pepper to taste
Directions
Step 1: Tear sweetbreads apart into 1-inch pieces, discarding any stringy ligaments as you go. Rinse the pieces with water to clean them thoroughly.
Step 2: Drain the sweetbreads in a colander set in the sink to remove any excess water.
Step 3: Heat about inch of oil in a large saucepan over medium-high heat, aiming for a temperature of 350F (175C).
Step 4: Place the flour in a shallow bowl. Lightly press the slightly damp sweetbreads into the flour, coating them evenly.
Step 5: Fry the coated sweetbreads in the hot oil until golden brown, turning them once to ensure even cooking.
Step 6: Once fried, remove the sweetbreads from the oil and drain them on a paper towel-lined plate.
Step 7: Season with salt and pepper to taste and serve hot.
