Crispy Fried Tofu Recipe
Ingredients
- 1 (12 ounce) package extra-firm tofu
- teaspoon salt
- Vegetable oil for frying
Directions
Step 1: Wrap the tofu in a clean towel and place it on a plate. Set another plate on top of it and apply a 3- to 5-pound weight. Press the tofu for about 20 minutes, then drain and discard any accumulated liquid.
Step 2: Cut the tofu into 1-inch by 2-inch chunks. Sprinkle teaspoon salt on one side, flip the tofu over, and sprinkle the remaining teaspoon salt on the other side.
Step 3: Heat oil in a wok or large skillet over medium heat. To test if the oil is ready, dip a chopstick or wooden spoon into the oil. If bubbles rise around it, the oil is ready. If the oil begins to smoke, its too hot.
Step 4: Using metal tongs, carefully place 5 to 8 pieces of tofu at a time into the hot oil. Be cautious, as the oil may splatter. A splatter guard can help prevent this. Fry the tofu for 3 to 4 minutes until golden and crispy.
Step 5: Drain the tofu on a plate lined with paper towels to absorb excess oil. Let it cool slightly before serving.

- For this recipe, use extra-firm tofu only, as silken tofu will not hold up well during frying.
- If you prefer your tofu darker and crispier, consider deep frying the pieces a second time.
