Simple Beef Short Ribs Recipe
These braised short ribs are flavorful, juicy, and fall-off-the-bone tender. Follow the step-by-step instructions below for a delicious meal.
Ingredients
- 1 pound beef short ribs
- 1 teaspoon salt
- teaspoon ground black pepper
- 2 tablespoons all-purpose flour
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 onion, sliced
- 1 clove garlic, minced
- 1 (12 fluid ounce) can or bottle stout beer
- 1 cup beef stock
Instructions
- Prepare the ingredients: Gather all the necessary ingredients and ensure they are ready to use.
- Season the ribs: Season the beef short ribs with salt and black pepper on all sides. Dredge the ribs in flour, coating them evenly and shaking off any excess flour.
- Brown the ribs: In a large Dutch oven or skillet, heat the olive oil and butter over medium-high heat. Add the ribs and cook them for about 5 minutes per side until they are browned. Remove the ribs from the pot and set them aside.
- Cook the onions and garlic: In the same pot, add the sliced onion and minced garlic. Cook and stir for about 5 minutes until the onion becomes tender and fragrant.
- Deglaze the pot: Return the browned ribs to the pot. Pour in the stout beer while scraping up the browned bits from the bottom of the pot to add flavor to the sauce.
- Add beef stock: Pour the beef stock into the pot and stir everything together. Bring the mixture to a gentle simmer.
- Braise the ribs: Cover the pot and lower the heat. Let the ribs braise for about 2 hours, stirring occasionally, until the meat is very tender and easily falls off the bone.
- Serve: Once the ribs are tender, remove from the heat and serve with your favorite sides. Enjoy!

- This was the best short rib recipe Ive made to date, according to funeralsinger1. And the leftovers were great for my beef tostada a few days later.
Cook's Note
You can braise the beef ribs in almost any liquid, such as red wine instead of beer. If your ribs are very fatty, you can allow the sauce to cool and skim the fat off the top before serving.

These were easy to make. We wanted something w/o barbeque sauce on them, and this fit the bill. Changed the method of preparation a bit by doubling the amount of pepper & flour with the same amount of salt and putting it into a plastic bag and coating the pieces of short ribs inside the plastic bag before cooking the ribs. Didn't use the beer. After deglazing the pan with water & 2 beef bouillon cubes (we were out of beef stock), everything was put into a roasting pan. Baked the ribs in the oven with the cover on at 325 for almost 2 hours. ( Watch so that the liquid doesn't run dry in the roaster ). They turned out very tender and tasty. May use a crock pot the next time these are made as others have suggested. Thank You for posting. It's a keeper.

Like other reviewers, I added extra garlic and the second time, I tossed in a few thyme sprigs. I also put it in the oven at 275 until it was done. This is SUCH a satisfying dish!

I increased the braising time to further tenderize the meat. Also added potatoes and carrots for the last 30 minutes. Love the simplicity!

Was very surprised despite all the good reviews. I did adjust for our family. I used almond flour seasoned with rosemary, garlic powder, pepper and paprika. I used a crockpot on low for 6 hours adding potatoes and carrots the last 45 min. My crockpot runs hot, thus the cut in time. I used Sierra Nevada Stout. I used 2 cups of beef bone broth and 2 cups of chicken broth. It was melt in your mouth and so flavorful. I followed others advice and was heavy handed on the salt when seasoning the meat. I also used the broth afterwards to make a delicious gravy. I think next time I will serve with mashed potatoes and green beans. This will definitely be a repeat for us and dinner guests. It's that good.

Really good!! I followed the recipe, except I used regular beer because that was all I had. About 50 minutes before beef was done, I added celery and carrots. And about 40 minutes prior to it finishing, I added quartered potatoes. It was all so yummy! I will definitely make this recipe again!!

This made an outstanding dinner! I made this recipe with Merlot wine rather than beer and I doubled the amount of ribs, used a large onion and 6 cloves of garlic. I served this over mashed potatoes and with green beans. It would, also, be good served with noodles. It came out so tender and delicious. Next time I will try adding some sour cream and perhaps mushrooms extending the sauce more. We have leftovers for lunch now - there were 2 large short ribs and 2 small ones in the packages that I bought so the small ribs will be lunch.

I have made this recipe many times. There are better but more complex recipes out there for short ribs. However, you can't beat this one for simplicity. For added flavor I sometimes reduced the broth to make a demi glace. I even made this in a dutch oven over a campfire. We have also used beef shin instead of short ribs because it was more economical and it was just as good. Stout does add some more flavor but I usually use the darkest beer I have around, typically Yuengling Lager. This is one of those recipes that you can easily be altered to your taste to make it your own.

I’m allergic to alcohol, so I used a bottle of IBC root beer and it turned out great. I thickened the gravy with some flour and extra beef broth and used that over mashed potatoes.

Easy to make, clear directions. I used all ingredients listed but modified the proportions especially the liquids for an Instant Pot version. It took 40 minutes. It came out very tasty and the meat fell off the bone easily. Melt in your mouth goodness!

I used boneless beef ribs from Costco because I had them already. I increased the onion and garlic because I had more than a lb of meat. I covered it and braised it in the oven on 300 degrees for 3 hrs. This dish was superb!

Easy basic recipe. You can always add to it. Like others wrote you can change out the beer, add some red wine instead of beer, add nothing other than beef broth. I always double up on the onions and garlic and if I have a nice over ripe tomato, I add that too along with a dash of Worcestershire sauce and thyme.
