Roasted Pork Loin Recipe

Ingredients
- 3 cloves garlic, minced
- 1 tablespoon dried rosemary
- Salt and pepper to taste
- 2 pounds boneless pork loin roast

- cup white wine
Directions
Step 1: Gather all ingredients.
Step 2: Preheat the oven to 350F (175C).
Step 3: In a mortar and pestle, crush garlic, rosemary, salt, and pepper to create a paste.
Step 4: Using a sharp knife, make several small cuts in the pork loin. Press the garlic paste into these openings.
Step 5: Rub the remaining garlic paste mixture and olive oil all over the pork loin.
Step 6: Place the pork loin into an oven-safe pan.
Step 7: Put the pork loin in the preheated oven. Every 30 minutes, turn the meat and baste with the pan's juices.
Step 8: Continue cooking until the pork reaches an internal temperature of 145F (63C), which should take about 90 minutes to 2 hours. Check doneness using an instant-read thermometer.
Step 9: Remove the pork roast from the oven and transfer it to a platter. Keep it warm.
Step 10: Place the pan on the stove over medium-high heat. Add white wine and stir, scraping the browned bits from the bottom of the pan.
Step 11: Simmer the wine sauce for 3 to 5 minutes to reduce slightly.
Step 12: Slice the pork loin and serve with the pan juices.
