Bay Scallops with Asparagus and Mushrooms
This light and flavorful dish combines tender bay scallops, fresh asparagus, and savory mushrooms, all perfectly cooked in the air fryer for a quick and healthy meal. Serve with a fresh squeeze of lemon for a burst of flavor!
Ingredients
- pound bay scallops, rinsed and patted dry
- 8 spears asparagus, trimmed and cut into 1-inch pieces
- 4 medium mushrooms, sliced
- 1 tablespoon olive oil
- 1 teaspoon lemon-pepper seasoning
- 1 teaspoon parsley flakes
- teaspoon ground paprika
- 2 wedges lemon
Directions
- Preheat the air fryer to 400F (200C).
- In a large bowl, combine the scallops, asparagus, mushrooms, olive oil, lemon-pepper seasoning, parsley, and paprika. Stir well to ensure everything is evenly coated.
- Transfer the mixture to the air fryer basket, spreading it out in an even layer.
- Cook in the preheated air fryer for 8 minutes, shaking the basket halfway through the cooking time to ensure even cooking.
- Once done, serve immediately with fresh lemon wedges for added flavor.
