Bay Scallops with Asparagus and Mushrooms

This light and flavorful dish combines tender bay scallops, fresh asparagus, and savory mushrooms, all perfectly cooked in the air fryer for a quick and healthy meal. Serve with a fresh squeeze of lemon for a burst of flavor!

Ingredients

  • pound bay scallops, rinsed and patted dry
  • 8 spears asparagus, trimmed and cut into 1-inch pieces
  • 4 medium mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon-pepper seasoning
  • 1 teaspoon parsley flakes
  • teaspoon ground paprika
  • 2 wedges lemon

Directions

  1. Preheat the air fryer to 400F (200C).
  2. In a large bowl, combine the scallops, asparagus, mushrooms, olive oil, lemon-pepper seasoning, parsley, and paprika. Stir well to ensure everything is evenly coated.
  3. Transfer the mixture to the air fryer basket, spreading it out in an even layer.
  4. Cook in the preheated air fryer for 8 minutes, shaking the basket halfway through the cooking time to ensure even cooking.
  5. Once done, serve immediately with fresh lemon wedges for added flavor.
