Baked Pollock Recipe
Recipe: Baked Pollock with Parmesan Herb Topping
Ingredients
- Nonstick cooking spray
- 6 (4 ounce) fillets of fresh pollock
- 1 tablespoon chopped fresh herbs (or to taste)
- Salt and ground black pepper (to taste)
- cup sour cream
- cup grated Parmesan cheese
- 2 tablespoons melted butter
Directions
- Preheat your oven to 350F (175C).
- Line a baking sheet with aluminum foil and lightly coat it with nonstick cooking spray.
- Season the pollock fillets with chopped herbs, salt, and pepper. Arrange the fillets on the prepared baking sheet.
- In a small bowl, combine the sour cream, Parmesan cheese, and melted butter. Stir until well mixed.
- Spread the sour cream mixture evenly over the top of each fillet.
- Bake in the preheated oven for 15 to 25 minutes, or until the fish flakes easily with a fork.
Recipe Tips
- You can use any fresh herbs you have available for added flavor.
- If using frozen pollock, be sure to thaw it before cooking.

I have 4 stars only because the recipe didn't specify spices. Less experienced cooks might be at a loss. I used garlic powder, onion powder, dill weed and salt and fresh ground pepper. Served with lemon wedges. I didn't measure the sour cream or cheese, so I used enough cheese to thicken up the sour cream and spices. I did salt and pepper the fish directly to ensure adequate flavor. I forgot to add the butter that I melted but the flavor didn't seem to miss it. The beauty of this recipe is simplicity. Pat the fish fry, spread the mixture on it (I covered both sides) and put it in the oven. I love quick and easy! I served the fish with lemon wedges, field peas, Mahatma rice and dinner rolls. We eat less fish in the winter because cold days seen to beg for heartier meals. This recipe and my side dishes was light but savory enough for a cold sunny day. Dessert is vanilla ice cream with hot fudge sauce. I added this recipe to my go-to dinners. Very good!

I agree with reviewer Karole - not knowing which spices or seasonings the submitter is intending or recommending makes this hard for new cooks. I used onion and garlic powder, lemon pepper and dill. I broiled for the last couple of min to get the fish a more pretty presentation. This combo would be good on any firm white fish - like halibut, cod, sea bass and maybe even walleye. It’s super easy and you can have dinner on the table in less than 30 min - a huge plus! Would make again! Thanks pokygirl

Wonderful flavors and texture. I turned on the broiler for a couple of minutes to give it a little color and crust. I added some fresh green onions, parsley and dill.

Used thawed frozen fillets. Didn’t have variety seasoning so used commercial brand total seasoning for chicken & fish for seasoning fillets. Also added parsley to cheese topping Cooked in my countertop convection oven. Only did 3 fillets Taste: good I’d do again my husband liked it a lot. I’ll def tinker with the seasonings next time.

My husband is not a fan of fish. He grumbles a bit and eats it only because I put it in front of him. After his first bite Of this recipe he told me that this is the BEST fish that I’ve ever given him! Thanks for the recipe, it’s a keeper! Before following the recipe directions I started by marinating frozen pollock with lemon juice and Salt Sister’s tuscan farmhouse blend seasoning while it was thawing in the fridge.

Love this easy recipe. I used pollack and sprinkled on Maine Maple Pepper. Then coated it with the sour cream/parmesan/butter mix. Cooked it with some jasmine rice (with a pat of butter) and served it with ginger/honey carrot coins. It was an exceptional meal for one.

Tasted great and kids loved it! I didn't have any sour cream so I used mayo and some lemon juice. Next time I might put it in the broiler to get the topping crispy.

The first time I made this, I realized I needed to amp up the flavor. This time I added Ranch Seasoning to the cheese mixture as well as a little Dan'O spicy mix. I also added the garlic powder and onion powder like another reviewer mentioned. The base is a good start, but it definitely needs more flavor-makers.

Great taste! I used lite sour cream. Did not use melted butter to save calories. Used tilapia instead of pollock and baked for about 10 minutes. Used onion and garlic powder as the spices.

SO good! My sister is a Vegetarian but DOES eat Turkey, chicken and fish. We wanted to bake it because it's healthier than frying but we didn't want it dry. It was SO easy and SO good! I had 2 separate pans and other than salt and pepper, I put Mezco Sweet &Spicy Spice Blend on fish in one pan and Old Bay Seasoning on the fish in the other pan. I'm actually waiting for my sister to get here so we can compare the two different recipes. This is actually the third time in 3 weeks making it for my sister. I can't remember what spices I used the other two times, however

My wife is the one who made it after showing me the recipe, but all I can tells you is that it was delicious!
