Ingredients

  • 1 (14 ounce) package firm tofu, cut into 3/4 inch cubes
  • 1/3 cup chopped green onion
  • 1 teaspoons olive oil
  • teaspoon sesame oil
  • 1 teaspoon soy sauce
  • 2 teaspoons grated fresh ginger root
  • cup chunky peanut butter
  • 3 tablespoons flaked coconut
  • Sesame seeds (for garnish)

Directions

  1. Heat the olive oil and sesame oil in a skillet over medium-high heat.
  2. Once the oils are hot, reduce the heat to medium and add the chopped green onions. Cook for 1 minute until softened.
  3. Add the tofu cubes to the skillet and continue cooking for 4 minutes, stirring occasionally. Halfway through cooking, sprinkle the tofu with soy sauce to enhance the flavor.
  4. Gently stir in the peanut butter and grated ginger, being careful not to break the tofu. Continue stirring until the peanut butter is well incorporated into the tofu mixture.
