Filet Mignon with Crabmeat

- 2 (8-ounce) filet mignon steaks
- Coarse sea salt, to taste
- Coarsely ground black pepper, to taste
- 1 pound fresh lump crabmeat
- 3 tablespoons butter, melted and cooled
- 2 tablespoons olive oil
Directions
- Preheat the oven to 425F (220C), placing the oven rack in the middle position. Oil a baking sheet and set it aside.
- Pat the filet mignon steaks dry with a paper towel, then season both sides with coarse sea salt and coarsely ground black pepper. Set them aside for later.
- In a separate bowl, toss the fresh lump crabmeat with the cooled, melted butter. Set this mixture aside.
- Heat the olive oil in a large, heavy skillet over medium-high heat. The oil should be hot but not smoking.
- Once the skillet is hot, add the filet mignon steaks and brown them for about 3 minutes on each side, until a golden crust forms.
- Transfer the browned steaks to the prepared baking sheet and place them in the preheated oven. Roast for about 10 minutes or until the filets start to firm up and are reddish-pink and juicy in the center. Use an instant-read thermometer to ensure that the internal temperature reaches 130F (54C).
- Once the steaks are done, remove them from the oven and top each filet with the crabmeat mixture.
