Smothered Beef Liver Recipe

Ingredients
- 3 tablespoons vegetable oil
- 1 large onion, sliced
- 1 pound beef liver
- cup all-purpose flour
- 1 teaspoon salt, or to taste
- teaspoon ground black pepper, or to taste
- 1 (8 ounce) can tomato sauce
- cup water
- teaspoon dried oregano
Directions
- Heat vegetable oil in a large skillet over medium heat. Saute the onions until they become soft but not browned. Once done, remove the onions from the skillet using a slotted spoon and set them aside.
- Slice the beef liver into serving-sized pieces and remove any membrane that may be attached.
- In a shallow dish, combine the flour, salt, and pepper. Coat the liver pieces in the flour mixture, ensuring they are evenly covered.
- Place the floured liver pieces into the hot skillet. Quickly brown the liver on each side, about 1-2 minutes per side.
- Once the liver is browned, place the reserved sauted onions on top of the liver pieces.
- Pour the tomato sauce and water over the liver and onions. Gently lift the liver pieces to allow the sauce to coat the bottom of the pan.
- Sprinkle the dried oregano over the top, then reduce the heat to low. Let the dish simmer for 8-10 minutes, stirring occasionally to ensure the flavors meld together.
- Adjust salt and pepper to taste. Be careful not to overcook the liver, as it can become tough.
- Serve hot, ideally with mashed potatoes and green beans for a complete meal.
