Recipe for Pistachio-Crusted Chicken

Ingredients

  • 1 cup chopped pistachios
  • cup bread crumbs
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Salt and ground black pepper to taste
  • 2 large skinless, boneless chicken breasts, cut into 1-inch strips

Directions

Step 1: Preheat the oven to 500F (260C). Lightly coat a baking sheet with cooking spray.

Step 2: In a shallow bowl, combine chopped pistachios and bread crumbs.

Step 3: In a separate bowl, whisk together Dijon mustard, olive oil, honey, salt, and pepper until smooth.

Step 4: Dip each piece of chicken into the Dijon mustard mixture, ensuring it is fully coated.

Step 5: Dredge the coated chicken pieces in the pistachio-breadcrumb mixture until evenly covered.

Step 6: Arrange the coated chicken strips on the prepared baking sheet.

Step 7: Place the baking sheet in the oven and immediately reduce the temperature to 375F (190C). Bake for about 20 minutes, or until the chicken is no longer pink, juices run clear, and the crust is golden brown.
