A Scotsman's Shepherd Pie Recipe
Ingredients
- 5 cups mashed, boiled potatoes
- cup sour cream
- 2 ounces cream cheese
- 2 tablespoons butter, softened, divided
- 1 egg yolk
- teaspoon kosher salt
- teaspoon freshly ground black pepper
- 1 teaspoons olive oil
- 1 pound ground lamb
- 1 pinch salt and ground black pepper to taste
- 1 (16 ounce) can stewed tomatoes with juice, chopped
- 1 small onion, chopped
- 1 small carrot, peeled and chopped
- cup peas
- 1 cup Irish stout beer (such as Guinness)
- 1 cube beef bouillon
- 1 tablespoon all-purpose flour
- 1 tablespoon Worcestershire sauce
- cup shredded sharp Cheddar cheese
- 2 teaspoons chopped fresh parsley
- 2 teaspoons smoked paprika
Directions
- In a bowl, combine mashed potatoes, sour cream, cream cheese, 1 tablespoon of butter, egg yolk, kosher salt, and black pepper. Stir until smooth and well incorporated.
- Heat olive oil in a cast iron skillet or nonstick pan over medium-high heat. Add ground lamb and reduce the heat to medium. Cook, stirring frequently, for 4 to 5 minutes, until the lamb is browned and crumbly. Drain any excess grease and season with salt and black pepper to taste.
- Add stewed tomatoes with their juice, chopped onion, and chopped carrot to the lamb. Stir and simmer for 5 to 10 minutes until the vegetables are tender.
- Stir in peas and reduce the heat to low. Cook for an additional 2 to 3 minutes, stirring occasionally, until the peas are warmed through.
- In a separate saucepan, heat the Irish stout beer over medium heat. Add the beef bouillon cube and cook, stirring occasionally, for about 5 minutes or until the bouillon is fully dissolved.
- In another pan, melt the remaining 1 tablespoon of butter over medium-low heat. Once melted and sizzling, whisk in the flour until the mixture becomes thick and paste-like, about 1 minute.
- Gradually stir the beer mixture and Worcestershire sauce into the flour mixture. Continue stirring for 2 to 3 minutes until the gravy is smooth and has thickened.
- Pour the gravy into the lamb mixture, stirring well to combine. Simmer for at least 5 minutes until the mixture thickens further.
- Preheat the oven's broiler, setting the oven rack about 6 inches from the heat source. Grease a 9x12-inch baking dish.
- Transfer the lamb mixture to the prepared baking dish. Spoon the mashed potato mixture over the lamb, spreading it evenly to cover the filling like a crust.
- Top the mashed potatoes with shredded Cheddar cheese, fresh parsley, and smoked paprika.
- Broil in the preheated oven for 4 to 5 minutes, or until the top is golden brown and the cheese is melted and bubbly.
- Allow the dish to cool for about 5 minutes before serving.
Cooks Note
If using instant potatoes, opt for a high-quality brand like Honest Earth All Natural Creamy Mash. Smoked sharp Cheddar cheese pairs especially well with this dish.

The flavor of this shepherd's pie was great, but why dirty 5 pans?! If you don't have a maid, I'd suggest starting with a large cast iron skillet, cook the meat, onion and carrot together, drain, add butter and flour to skillet to form a roux, then add the beer, bouillon, etc. and simmer 'til thickened. Top with potatoes, cheese, etc. and put under the broiler as instructed. Get the same yummy results with much less cleanup!

This recipe is to die for! It is so good that my husband and I thought it was quite possibly one of the best things we have ever tasted, and I have a very wide culinary repertoire having lived in three different countries, and I LOVE to cook! I have been making shepherds pie for 20 years but this will be the only shepherds pie recipe I ever use from now on! The only thing I changed was that I added more carrots and peas - I probably doubled them at least. It was wonderful and we couldn't stop eating it and my husband keeps asking me when I will be making it again (even though it is now 112 degrees outside, lol) Comfort food at it's BEST!

Delish! Even with my tweaks. Here's what I did: Made recipe, omitting cream cheese & egg from potatoes. Doubled carrots & peas, but omitted tomatoes, cooking veggies in half of the stout with a generous T. of tomato paste. Substituted dried mint instead of parsley because it's tasty with lamb and peas. Followed suggestion of cooking in oven, then browning under broiler. Thanks for recipe! Will become a cold night staple at our house.

My daughter's fiance loves Shepherd's Pie...it is his favorite. He recently did a lot of "fixit" things for me and I thought I would make your recipe...the only thing I changed was that I used beef, because lamb was $11.00 per pound! I also used frozen mixed veggies (carrots, green beans, peas and corn) in place of the fresh carrot and peas. I made everything ahead of time and did not put the potatoes on top until I was ready to cook the casserole. I followed the recipe exactly and IT WAS FABULOUS! He raved about it all night as did my daughter and he has been telling everyone it was the absolute best Shepherd's pie he has ever had! Thank you so much for this yummy recipe...obviously a total hit!

This dish was a huge hit with my crew. After reading reviews I opted to add flour to the meat then added the additional ingredients and added the potatoes in the same cast iron skillet I used for making the meat mix.. We opted for deer meat because that is what was on hand. Next time around I’ll add a little more flour as it was still a little on the runny side and more meat. And maybe a little cayenne to give it some kick and a little more pepper. (We like spicy..). My son suggested putting it in a pie shell next time to add a bit of texture. All in all a fantastic recipe. The meat filling would definitely make a great pot pie filling. This will certainly be on the menu again.

I lived in Great Britain for three years and have had lots of traditional Shepherd's Pie. This is the best recipe I have found and the combination of flavors is better than the originals. The entire family thought it was amazing...including my finicky pea-hating kids. I got around their pea-aversion by using a food processor to chop some semi-frozen peas into small pieces along with the carrots and onion. Since they were no longer pea-balls, they didn't even notice. I didn't have any Guiness on hand either, so substituted with a dark porter beer. It had the same effect and was amazing in the gravy.

I had baked potatoes so, instead of mashed I scalloped them on top, adding the cheese sauce (sour cream, butter, egg) on top. Baked for about 25 minutes. It came up great.

Sooo goodI have made this 3 times in 2 weeks! The stout beer gravy really makes this dish. I made 2 changes, instead of putting under the broiler I baked in oven at 350 for about 30 mins I used my own mashed potato recipe which contains sour cream anyway and I don"t put cheese on top, if you leave the cheese off, the potato forms a nice crust. This pie is so flavorfull you wont miss the cheese. I made it twice with ground lamb and once with angus ground beef )which technically makes it a cottage pie) it is really good both ways but I prefer it with the lamb. You can adjust seasonings to suit your tatse but don"t leave the beer out! This is the shepard's pie recipe I will use from now on, thanks for posting rhis wonderfull recipe.

I followed the recipe with the exception of doubling the meat / veg. I also used mixed frozen vegetables. Another review said they cooked veg in the beer with a tbsp or so of tomato paste instead of the tomatoes. I did this variation as my husband can’t have too much acid in food. It was so delicious! It did make a lot of dirty dishes, but completely worth it.

Tasted great! Used lamb and sirloin. I added some garlic and used more guiness. I cooked the veggies down in the pan after I drained the meat.. Will definitely make again there was hardly any left!

It took me a little over 2 hrs to prep but I take my time and put some serious love into every step. I did add about 2 oz of Proper Twelve Irish whiskey in with the Guinness for the gravy. I also used 2 lbs of ground lamb, (I’m Scott’s/Irish. I love meat!), a large onion, and a little Italian seasoning. I know, adding an Italian spice to a Scottish dish but it gave it a lil more flavor. As did the Whiskey. I also used roasted red pepper diced tomatoes with juice and compensated for the extra liquid for the gravy by adding a tsp of corn starch. It made the dish thicker in consistency. I’ve made this dish for the last 5 years and each time I add a lil something to bring out the flavors. Stellar recipe with equal results! It’s definitely bookmarked!

Google it! Shepherds Pie is from Scotland, the first documented recording from an English cookbook in the 1800s accredits Scotland to the dish. Also FYI, Scotland is a founding member of Britain, the term British only started when the Scottish and English crowns united I.e to be the United Kingdom of Great Britain. After all the English and Scottish flags overlapped make the British flag, there has been numerous Scottish prime ministers of Britain. There’s not been a king of England since the 1500s, the kings queens are the king of Great Britain. The same king James 6th to Scotland became king James 1st of England to unite the crowns. Same one who translated the Bible to English from Latin and set of the mayflower. Before that people were English or welsh or Scottish etc, not British. British is the collective term for the people from the whole island. It sounds ignorant and racist to say it only applies to English people.

It was a bit more work than I expected (but I am a beginning cook). The meat/veggie mixture turned out more watery that I expected. I would add more flour or cornstarch to the butter mix.

I really liked this. I made a couple of substitutes due to what I had on hand (beef instead of lamb, and a mix of cauliflower and potato mash since I didn’t have enough potato) so wasn’t true to the recipe and the intended flavours, but I’m confident as written this is still good. Plan to make it again as intended in the recipe as well.
