  • 1 pound skinless, boneless chicken breast halves, cut into 1-inch cubes
  • 3 tablespoons vegetable oil, divided
  • 3 celery ribs, sliced
  • 2 green bell peppers, diced
  • 1 onion, chopped
  • cup ketchup
  • cup lemon juice
  • cup crushed pineapple with syrup
  • cup packed brown sugar

Directions

  1. Step 1: In a shallow dish, combine the flour, garlic powder, salt, and pepper.
  2. Step 2: Roll the chicken pieces in the flour mixture, ensuring they are well-coated.
  3. Step 3: Heat 2 tablespoons of vegetable oil in a skillet over medium-high heat. Once hot, add the chicken to the skillet.
  4. Step 4: Cook the chicken, stirring occasionally, until it's no longer pink in the center and the juices run clear (about 8 to 10 minutes). Transfer the cooked chicken to a plate.
  5. Step 5: In the same skillet, add the remaining 1 tablespoon of oil over medium heat. Add the celery, bell peppers, and onion. Cook and stir for about 5 minutes, until the vegetables are slightly tender.
  6. Step 6: While the vegetables are cooking, whisk together the ketchup, lemon juice, pineapple with syrup, and brown sugar in a bowl.
  7. Step 7: Return the chicken to the skillet, pour the pineapple mixture over the chicken and vegetables, and bring to a boil.
  8. Step 8: Cook and stir for 2 to 3 minutes, until the chicken and vegetables are heated through and coated with the sauce.
