Air Fryer Cornflake-Crusted Chicken Tenders Recipe

Ingredients
Egg wash:
- 1 egg
- 1 tablespoon pesto
- 1 pinch salt
Dry mix:
- 1 cup crushed cornflakes
- 1 ounce finely shredded Parmesan cheese
- teaspoon cantanzaro herbs (or a similar herb blend like Savory Spice Shop)
- teaspoon granulated garlic
Other:
- 1 pound chicken tenders
Directions
- Preheat your air fryer to 400F (200C).
- In a shallow dish, whisk together the egg, pesto, and salt to make the egg wash.
- In another dish, combine the crushed cornflakes, Parmesan cheese, cantanzaro herbs, garlic, and salt to create the dry coating mixture.
- Dip each chicken tender into the egg wash, ensuring it's fully coated, then dredge it through the cornflake mixture, gently shaking off any excess.
- Place the coated chicken tenders in the air fryer basket, making sure they're not overcrowded.
- Air fry the chicken for 5 minutes, then rearrange the tenders to ensure even cooking.
- Continue air frying for another 5 minutes, or until the chicken is fully cooked, no longer pink in the center, and the juices run clear.
Recipe Tip
If you don't have chicken tenders, you can substitute them with chicken breasts cut into strips for a similar result.
