Italian Sausage and Gnocchi Skillet Recipe
Ingredients
- 1 tablespoon avocado oil
- cup finely diced onion
- 2 large cloves garlic, finely diced
- 1 pound mild Italian pork sausage, casing removed
- 1 (16 ounce) package dry mini potato gnocchi
- 2 cups no-salt-added diced tomatoes, undrained
- teaspoon salt
- teaspoon dried basil
- teaspoon ground oregano
- teaspoon ground black pepper
- 5 ounces baby spinach
- 1 pinch freshly grated nutmeg
- 1 cup shredded fresh mozzarella cheese
- cup freshly shredded Parmesan cheese
Directions
- Heat avocado oil in a large nonstick skillet over medium-high heat. Add diced onion and cook until softened, about 3 to 4 minutes.
- Add garlic to the skillet and cook until fragrant, approximately 30 seconds.
- Add sausage to the skillet. Stir to break up the meat and cook until browned and fully cooked through, about 5 to 7 minutes.
- Drain any excess oil from the pan, but keep the meat mixture in the skillet.
- Add gnocchi to the skillet, stirring to break up any clumps.
- Stir in diced tomatoes, salt, basil, oregano, and pepper. Cover the skillet and simmer for 5 minutes.
- After 5 minutes, add spinach and freshly grated nutmeg. Stir and let simmer until the spinach wilts, about 3 to 5 minutes.
- Sprinkle shredded mozzarella and Parmesan cheeses on top of the mixture, cover, and let simmer until the cheese has melted, about 2 to 3 minutes.
- Serve immediately while hot and enjoy!

Thought we had Gnocchi but discovered we had Tortellini instead. Cooked the tortellini separately and substituted it for the Gnocchi in the recipe. The dish turned out amazing. We used less spinach, only about a quarter of what was recommended, and added a large red bell pepper along with a yellow onion, as the recipe didn't specify which type to use.

A wonderful alternative to dining out! I made this recipe using 2 cans of diced tomatoes, JennieO Italian ground turkey, 1 tsp of Italian seasoning, and omitted the nutmeg. I also added plenty of cheese, and the result was absolutely delicious!

Fantastic and effortlessly quick! Instead of fresh, chopped tomatoes, I opted for a 14oz can...and since I felt there wasn't sufficient liquid to simmer the gnocchi, I spontaneously poured in a second 14oz can - and it was just right. Along with the second can, I included an extra 1/2 tsp of basil/oregano, making it 1 tsp in total. This dish was a massive hit, bursting with flavor and remarkably easy to prepare!
