Savory Halibut Enchiladas Recipe

Original recipe (1X) yields 8 servings

  • 2 pounds skinless halibut fillets, cut into large pieces
  • 1 pinch garlic powder
  • Salt and ground black pepper to taste
  • 2 cups shredded Cheddar cheese, divided
  • 1 bunch green onions, chopped
  • 1 green bell pepper, finely chopped
  • cup sour cream
  • cup coarsely chopped fresh cilantro
  • cup mayonnaise
  • 2 (10 ounce) cans enchilada sauce, divided
  • 8 flour tortillas
  • 2 avocados, peeled, pitted, and sliced

Directions

  1. Step 1: Preheat the oven to 375F (190C).
  2. Step 2: Season the halibut fillets with garlic powder, salt, and black pepper. Place them on a microwave-safe plate and microwave for about 2 minutes until slightly cooked.
  3. Step 3: In a bowl, combine 1 cup of shredded Cheddar cheese, chopped green onions, finely chopped bell pepper, sour cream, fresh cilantro, and mayonnaise. Gently fold in the slightly cooked halibut fillets.
  4. Step 4: Coat a 9x13-inch baking dish with cooking spray. Pour half of the enchilada sauce into the bottom of the dish and set aside.
  5. Step 5: Pour the remaining enchilada sauce into a separate bowl. Dip each tortilla into the sauce, ensuring it is lightly coated. Place the tortillas on a flat surface.
  6. Step 6: Evenly divide the halibut mixture among the center of each tortilla. Carefully roll the tortillas to enclose the filling and place them seam-side down in the prepared baking dish.
  7. Step 7: Pour the remaining half of the enchilada sauce over the top of the rolled tortillas. Sprinkle with the remaining 1 cup of shredded Cheddar cheese.
  8. Step 8: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  9. Step 9: Once baked, top the enchiladas with sliced avocado before serving.

I was pleasantly surprised by how delicious this dish turned out with simple and affordable catfish nuggets. I was hesitant to spend $15+ per pound on halibut, so I improvised with what I had on hand. The flavors were great, and I believe cod or another whitefish would work well too. My only critique of the recipe is that it didn't specify the size of the tortillas. I used 8-inch tortillas and found that the filling was too much for the 8 of them.

I prepared this dish using fresh fish caught by my son. I pan-fried the fish in olive oil with onion and seasoned it as per the recipe. Instead of green pepper, I used a can of green chilies. I included all the other ingredients required for the enchilada filling. The fish salad turned out amazing - it's a real winner! I have to give it 5 stars just for that! Currently, I'm eagerly awaiting the completion of the rest of the dish. Loving this recipe every step of the way.

I reduced the amount of green chili sauce slightly when preparing this dish for children, but I believe it would have been even more flavorful if I had followed the recipe exactly. Nevertheless, it turned out to be very tasty and moist. Thank you for sharing the recipe!

I followed the recipe exactly and the results were phenomenal! Halibut was a bit pricey at $22 per pound, so I opted for Mahi-Mahi as a substitute - a mild yet meaty fish that worked perfectly. Both my family and guests thoroughly enjoyed it! Thank you for sharing this fantastic recipe.

I particularly enjoy when people modify a recipe entirely and then are surprised when it doesn't turn out well. Perhaps you simply don't enjoy fish? Or maybe cooking isn't your strong suit!
