I decided to double the recipe and used a combination of hot and sweet Italian sausage. After browning the sausage links, I sliced them and browned each side further. I added two cans of diced tomatoes with Italian seasoning (including the juice) to the sautéed veggies, without using wine or beer. While the dish was simmering, I added a few sprinkles of red pepper flakes, basil, and oregano. I served this delicious dish over cilantro lime rice.
