Ultra Easy Pineapple Chicken Kabobs Recipe
Servings: 2
Ingredients:
- 1 green bell pepper, cut into 1-inch cubes
- 1 (15-ounce) can pineapple chunks, drained
- pound boneless, skinless chicken breast halves, cut into 1-inch cubes
- onion, cut into 1-inch cubes
- cup barbecue sauce, or as needed
- 6 skewers
Directions:
Step 1: Preheat an outdoor grill to medium-high heat and lightly oil the grate.
Step 2: Thread the bell pepper, pineapple, chicken, and onion onto the skewers. Brush each skewer generously with barbecue sauce.
Step 3: Place the skewers on the preheated grill. Cook, turning frequently, for 7 to 10 minutes per side, or until the chicken is fully cooked (no longer pink in the center) and the skewers are nicely browned on all sides.

Updated Review: I took the Ultra Easy Pineapple Chicken Kabobs recipe and made them even more delicious by swapping out the chicken for Johnsonville Sweet Italian Sausage. I cooked them perfectly and followed the directions from the AR recipe. VERY GOOD! I opted for fresh pineapple instead of chunks for better skewering. Initially unsure about using barbecue sauce, I believed teriyaki sauce would complement the pineapple. I coated the entire kebab in barbecue sauce, aiming for that sticky flavor. The taste was delightful, and I plan to make these again with teriyaki sauce. I made this dish yesterday and it was absolutely delightful. I had some leftovers, so I decided to mix them with gravy and serve over rice. Here's the new discovery: Instead of using a cup of water with the chicken gravy packet, I used half a cup of leftover pineapple juice and half a cup of chicken broth. I may have added a splash of Chardonnay too. The result was outstanding. I will definitely start doing this from now on. I'm thinking of trying this kabob recipe with smoked sausage next.

I found this recipe to be incredibly simple and delicious. It was also very fast to make! The only change I made was to season the skewers with salt and pepper before adding the BBQ sauce. Perfect for a speedy summer meal, especially since no marinating is needed.
