Guinness Irish Stew Recipe
Ingredients
- 4 pounds boneless beef chuck, cut into 1-1/2-inch pieces
- 2 tablespoons vegetable oil
- cup all-purpose flour
- 2 pinches salt and ground black pepper, or to taste
- 2 pinches cayenne pepper
- cup vegetable oil
- 2 yellow onions, chopped
- 4 cloves garlic, crushed
- cup tomato paste
- 1 teaspoon water, or as needed
- 3 cups Irish stout beer (such as Guinness), divided
- 2 sprigs fresh thyme
- 4 large potatoes, chopped
- 2 cups chopped carrot
- 2 tablespoons chopped fresh parsley
Directions
Step 1: Toss the beef cubes in a bowl with 2 tablespoons of vegetable oil.
Step 2: In a separate bowl, whisk together the flour, salt, black pepper, and cayenne pepper.
Step 3: Dredge the beef cubes through the flour mixture, ensuring they are evenly coated.
Step 4: Heat cup vegetable oil in a large skillet over medium-high heat. Cook and stir the beef cubes in batches until browned on all sides, about 5 to 10 minutes. Transfer the browned beef to a Dutch oven or heavy-bottomed pot.
Step 5: In the same skillet, cook and stir the onions and garlic until lightly browned, about 5 to 10 minutes.
Step 6: Stir in the tomato paste, adding enough water to partially dilute it, then pour this mixture into the onions and garlic. Stir to combine.
Step 7: Reduce heat to medium, cover the Dutch oven, and simmer for 5 minutes.
Step 8: Add half of the Irish stout into the onion mixture. Bring to a boil, scraping any browned bits off the bottom of the pan with a wooden spoon. Transfer the entire mixture to the beef in the Dutch oven.
Step 9: Pour the remaining half of the Irish stout into the beef mixture, and add the sprigs of fresh thyme. Cover the Dutch oven, reduce the heat to low, and let it simmer for 2 hours.
Step 10: After 2 hours, add the potatoes and carrots. Continue to simmer, stirring every 20 minutes, until the potatoes are soft, about 1 hour.
Step 11: Adjust the seasoning with salt as needed. Garnish with freshly chopped parsley before serving.
