Lobster Newberg Recipe

Ingredients

  • 4 (4 ounce) lobster tails, split in half
  • Salt, to taste
  • 2 tablespoons clarified butter
  • 2 tablespoons sherry wine
  • cup heavy whipping cream
  • 2 large egg yolks
  • 1 pinch freshly grated nutmeg
  • 1 pinch cayenne pepper, or to taste
  • 1 tablespoon chopped fresh flat-leaf parsley, or to taste

Directions

Step 1: Season the lobster tails with salt.

Step 2: Heat the clarified butter in a large skillet over medium-high heat.

Step 3: Place the lobster tails, meat-side down, in the hot butter and saut for about 2 minutes per side, or until just cooked through. Transfer the lobster tails to a plate to cool.

Step 4: Pour the sherry into the skillet and bring it to a boil while scraping the browned bits from the bottom of the pan with a wooden spoon. Cook for about 1 minute, or until the sherry has reduced by half. Remove the skillet from the heat.

Step 5: Carefully pull the meat from the shells, discarding the shells. Roughly chop the lobster meat and pour any accumulated juices from the plate into the sherry mixture in the skillet.

Step 6: In a bowl, whisk together the cream, egg yolks, freshly grated nutmeg, and cayenne pepper.

Step 7: Whisk the cream mixture into the sherry mixture in the skillet. Return the skillet to medium-low heat, cooking and stirring constantly until the sauce thickens enough to coat the back of a spoon, about 3 to 7 minutes.

Step 8: Stir the chopped lobster meat into the sauce and cook until the lobster is heated through.

Step 9: Season with parsley and additional salt, if desired. Serve immediately.

Chef's Notes

You can substitute brandy for sherry, if desired. For an extra indulgent touch, serve with puff pastry shells.

I prepared this dish tonight with frozen puff pastry to simplify the process, and it turned out absolutely delicious. Following the instructions from the video, I used tarragon instead of the suggested herb and substituted cognac for sherry as I had these ingredients available. The only additional change I made was including some diced shallot when adding the cognac. The dish turned out awesome! Several years back, I made a big batch of this recipe when I was living in Connecticut, as lobster was more affordable than hot dogs for the 4th of July. I served it over a mound of pasta, and it was truly incredible.

Fantastic! Also convenient. I couldn't purchase solely lobster tails, therefore I bought two two-pound lobsters (being in New England, it's easy to come across a great seafood vendor). I steamed them until about 2/3 cooked (approximately 7 minutes), then extracted the meat. I proceeded with the recipe as directed, completing the cooking process, and utilized both tail and claw meat - the outcome was simply delightful!

Simply divine recipe. The most challenging step was separating the egg yolk. I served my lobster Newburgh on crispy brioche drizzled with olive oil and Parmesan. Absolutely delicious!

I enhanced the sherry cream mixture with some diced onion and Fresno peppers for an extra kick of heat. The result was absolutely delicious. I will certainly be making this dish again.
