Garlic Chicken Fried Brown Rice Recipe

Ingredients

  • 2 tablespoons vegetable oil, divided
  • 8 ounces skinless, boneless chicken breast, cut into strips
  • red bell pepper, chopped
  • cup green onion, chopped
  • 4 cloves garlic, minced
  • 3 cups cooked brown rice
  • 2 tablespoons light soy sauce
  • 1 tablespoon rice vinegar
  • 1 cup frozen peas, thawed

Directions

Step 1: Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the chicken, red bell pepper, green onion, and garlic. Cook, stirring frequently, until the chicken is cooked through, about 5 minutes. Remove the chicken mixture from the skillet and set aside on a plate to keep warm.

Step 2: In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium-high heat. Add the cooked brown rice and stir to heat it through.

Step 3: Stir in the soy sauce, rice vinegar, and peas. Continue to cook for 1 more minute, stirring occasionally.

Step 4: Return the chicken mixture to the skillet and stir everything together to combine. Cook for another 1-2 minutes or until everything is heated through.

Tasty but Do not use fresh rice. I was so excited to try this that I cooked the rice specially, then made the recipe while the rice was still hot and sticky. The flavor was still pretty good, but the whole thing was sticky and gloppy. The texture would have been better had I actually used leftover cold rice.

Great recipe, very tasty. I like that you can make it with brown rice. I did fry the chicken strips first though, then removed them, before adding garlic, green onions and peppers to the pan. I stir fried them for about 1 minute before adding the rice as well as the rest of the ingredients. As some reviewers suggested I also used a few splashes of sesame seed oil, which really makes it special.

This is the best meal for me with young, very picky, kids! Oh, and my very picky husband! HA HA! I have had to make a few adjustments. I don't always have the foresight to make enough rice the day before. So, I have found that this is very good if I just make the chicken and veggies on top of my fresh rice. I sautee bell pepper, add diced chicken breast, cook a bit, add diced white onion, garlic and salt/season etc. I then add Chicken stock and my veggies (usually frozen carrots, corn, peas and green beans, because I seem to always have that) I add a lid and allow to simmer. Then I dish out my brown rice, spoon on the chicken/veggie mix. I sprinkle soy sauce to taste and I seriously, honestly, do not ever have enough!!! This is a meal that repeatedly I am asked for thirds on from a 4yr old, 7yr old, 9yr old and 43yr old. I feel like a champion after this one! I highly recommend it! Also, I have (as of tonight) learned to double my recipe ha ha!

This recipe was an excellent variation of fried rice using brown rice. I left out the rice wine vinegar as I already knew I don't care for it in fried rice, I also added a tablespoon of sesame oil in substitution for 1 T. of the vegetable oil (I used sunflower oil for health benefits)...the sesame oil makes this taste more like a restaurant-style fried rice. Easily customizable, I only took one star away because I feel it would have been very bland without the sesame oil.

Very easy to make and quick. Perfect meal when you don’t really want to cook. I added a scrambled egg (cooked on the side and then added) and some sea salt and pepper for flavor. I also added red pepper for spice. Do not add more than the recipe calls for oil because it’s more than enough. I used ready made frozen brown rice from the frozen food aisle at Trader Joe’s and 4 cups instead of three. My son loved it. I don’t think I’ll be ordering fried rice any time soon for take out.

The basic recipe lacked flavor so I took the advice of others and used sesame oil instead of vegetable oil. I had to almost double the amount of oil and soy sauce and added a dash more rice wine vinegar. I also added garlic salt, pepper and sesame seeds and eggs. I tasted along the way so I can say with confidence that as written this is very bland but with a few minor tweaks this is so much better than anything I’ve ever had before!

Loved it. Of course, use thigh not white meat since the health benefit is actual the opposite of common belief. Also, if you have time, follow the advice of the reviewer to marinate the chicken in soy sauce, rice vinegar, sesame oil, garlic, and ginger. Be sure to cook the chicken quickly. The small pieces cook in just minutes and are tender and juicy like a Chinese restaurant (using thigh meat).

I have to give this a good rating because it was the basis for a great meal. It is a very adaptable recipe (as shown in the reviews) so you can get a great meal with what you have available and seasoned to your taste. My changes? Chicken thighs instead of breast, sesame oil replaced vegetable oil, added mirin because I was out of rice vinegar, extra garlic plus salt & pepper, used tamari soy sauce because it’s what I had and added another tablespoon. My wife asked for seconds, I was very pleased with the results. Definitely will make again, probably with some other . 😁

I've made this twice now and we love it! It's a great way to use up rice from Chinese carry out - I don't know about you, but when we get carry out, we get more rice than we'll ever eat. This recipe is a great way to use it. I also add a diced carrot and a couple diced celery stalks to up the veggies. As a result, I sometimes double the soy sauce/rice vinegar. We love it!! It's become part of our regular rotation. So simple, and you won't be disappointed. Thank you for sharing!

I made mine with brown rice and it turned out really well. I also added a couple of eggs to boost the protein and some carrots I needed to use. All in all very good. I’ll definitely make this again.Thanks for sharing.

I liked this recipe a lot.. all I had was turkey tips so I marinated them in soy sauce, garlic and dried ginger..added a lot more veggies to it. Will absolutely make this again.. light, healthy and easy to make.

Sorry, just not a fan of this recipe. I loved chicken fried rice, but this was not the best. Maybe the rice I used was not great, IDK. Also added more soy sauce, garlic and vinegar but still not greatly impressed.

Made the rice as instructed on the bag, added 1/2 a bag of frozen peas and whatever spices I had on hand. Used liquid aminos instead of soy. When almost done I put a leftover pork roast on top and heated through in the last 10 minutes or so. Delicious 😋

Yum! Brown rice tasted just as good! Used Uncle Ben Boil in the Bag rice x2 spread out on Silpat and flash cooled in freezer for few minutes. Worked great! Trick is to smash and leave rice on bottom of pan and not flip until crisp. Added scrambled eggs. micro cooked some mixed veggies instead of just peas, drained and fried.

This recipe was amazing and the perfect way to use up several of my leftovers! I followed it pretty closely but with some substitutions. I didn't have rice vinegar so just used a bit of water so it didn't stick/get too dry. I used sesame oil instead of vegetable oil. Didn't have peas so I cut 6 small stalks of asparagus and added the small remainder of a bag of stir fry veggies I had in the freezer. I used leftover chicken and brown rice that I had last night. Will definitely do this again!!

Easy to make. It's a healthy meal that is fillling and taste great. Will make it again.
