Mediterranean Chicken Recipe

This recipe combines tender chicken breasts with fresh tomatoes, kalamata olives, and aromatic herbs, creating a flavorful dish perfect for a light yet satisfying meal. The addition of white wine and garlic elevates the flavors, making it a perfect choice for any occasion.

Ingredients

  • 2 tablespoons white wine
  • 2 teaspoons olive oil
  • 6 skinless, boneless chicken breast halves
  • 3 cloves garlic, minced
  • cup diced onion
  • 3 cups tomatoes, chopped
  • cup white wine
  • 2 teaspoons chopped fresh thyme
  • 1 tablespoon chopped fresh basil
  • cup kalamata olives
  • cup chopped fresh parsley
  • Salt and pepper to taste

Directions

Step 1: Heat the white wine and olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook until golden brown, about 4 to 6 minutes on each side. Remove the chicken from the skillet and set it aside.

Step 2: In the same skillet, add the minced garlic to the pan drippings and saut for about 30 seconds, just until fragrant.

Step 3: Add the diced onion and cook, stirring occasionally, for about 3 minutes or until the onion is tender and translucent.

Step 4: Add the chopped tomatoes to the skillet, then bring the mixture to a boil. Once boiling, reduce the heat to low and add cup of white wine. Let the sauce simmer for 10 minutes, allowing the flavors to meld together.

Step 5: Stir in the fresh thyme and basil, and continue to simmer for an additional 5 minutes.

Step 6: Return the cooked chicken to the skillet, covering it with the tomato sauce. Let it cook on low heat until the chicken is fully cooked through and no longer pink inside.

Step 7: Add the kalamata olives and chopped parsley to the skillet, and cook for another minute to combine all the flavors.

Step 8: Season with salt and pepper to taste, then serve the chicken hot with the tomato and olive mixture. Enjoy!

Five points: 1) I followed this recipe almost to a T. We only used dried oregano & basil instead of fresh, b/c both herbs go bad so much more quickly than I can use them. 2) re: kid-friendly: my three year old ate the chicken, but resisted the new flavor of the olives. But we don't feed him mac & cheese or hot dogs, so maybe his tastes won't translate to all American children. Someone raised the wine question; alcohol cooks off in recipes. There's no reason not to expand aa child's tastes with this great recipe! 3)My husband, who adores everything throat-burning hot, tried the suggested red pepper flakes sprinkled on top after tasting the authentic recipe & definitely prefered it as written. 4)Next time, we'll cut the Kalamata olives up into almost a tapenade, b/c the olive MADE this recipe & should be tasted in every bite. 5) We served the meal over a bed of basmati rice--good for soaking up all the delicate sauce. Next time--vermicelli.

This was very tasty. It has the potential to be 5 star with a few changes. I found that there was not enough sauce, so I will double it next time. 10 minutes is too long cooking the tomatoes; they fall apart. I also cut the chicken into strips and put it over pasta. I think adding feta and artichokes would be a nice addition. I added crushed red pepper for a little spice the first time, but will try the feta and artichoke next time and see what happens. I do have to say this though, it does make a nice aroma. My husband told me as he was walking up to our apartment he was thinking, 'I hope this is coming from my apartment'. UPDATE: This recipe has grown on me. I give it 5 stars with the following changes. 1. Double the sauce 2. Use diced canned tomatoes with juice 3. Use boneless, skinless chicken breasts cut in cubes. Enjoy!

Husband loved it! I did put in a cup of onion instead of 1/2 c., and also added a jar of marinated artichoke hearts along with the can of diced tomatoes (the kind in Italian seasonings). I also added 1 T. Italian seasoning with the other herbs. Also used closer to 1 c. of the wine. I had problems with the chicken (boneless, skinless thighs) getting browned, what with the wine being in the pan with the oil, so I heated up another fry pan with some olive oil and browned it up in that. While that was browning I worked on the sauce. When the chicken was done in that pan, I fried up some zucchini, onions and mushrooms with some more Italian seasoning in what was left from browning the chicken. It all came out great. I served the chicken over basmati rice, and sprinkled with feta. Awesome!

This was simply excellent....will definitely make again. IMHO the chicken needs to be browned well and be sure to include the wine in the EVOO when browning. I seasoned the chicken with a little salt, pepper and poultry seasoning prior to browning.

This was very tasty! I didn’t have a couple things so I compromised. I did not have wine nor did I have any thyme so I added Italian seasoning. I used 1 can of stewed tomatoes and added about 10 or 12 cherry tomatoes halved and added half way through the last 15 minutes with the parsley and olives. Served with Couscous which complemented it nicely. Will make again.

Husband and I loved it! Used three boneless skinless chicken thighs since it’s just the two of us. Kept all other ingredients the same and served over risotto. Didn’t have white wine, so I used ¼ c cab sav + ¼ c red wine vinegar. Threw it all in the crockpot in the morning and let it ride on low until dinner time.

I have to agree with several other reviewers who said it was pretty boring. I ended up adding fresh chopped cilantro and creaole seasoning to the already cooked mixture. I also made it ahead, put it into a greased casserole dish and baked it in the oven (time saver), topping it with cheese about the last 15 minutes of heating. It's a pretty healthy dish....just a little boring without adding more to the recipe.

Really enjoyed this recipe, simple and not too many ingredients but lots of flavour. Modifications: Ended up using “Aylmer Accents” diced tomatoes that had a bit more flavour to start with. Didn’t have fresh herbs so added dried herbs at the same time as the white wine.

Made this basically as written. I used canned, petite diced tomatoes (including juice). I also added a can of V8 juice at the end (but before adding the chicken back in). I used this liquid to cook the orzo I added. I garnished with toasted pine nuts. I think I will make this again, but go more towards "Greek" seasoning. I will use Greek oregano rather than basil, and garnish with feta in addition to the pine nuts. I may also cut the chicken into smaller pieces.

I have made this numerous times and we love it. I do however bake mine in a 9x12" pan once I've assembled it..350 for 1 hour. We shred any leftover chicken and combine all remaining ingredients with brown rice for a delicious second meal.

I made the recommended adjustments offered by other reviewers - double the sauce, use canned chopped tomatoes with the juice, added feta, and cut up the chicken. We had it over pasta and it was a hit! We will definitely make this again!

It was easy enough to make, but the cook time was way off. With 4-6 minutes per side for the chicken plus 10 minutes then 5 for the sauce you are already almost at the 30 minutes cook time, leaving no time for the chicken to finish cooking. When I was done it looked nothing like the picture - the tomatoes were cooked down and almost invisible. I made the full amount of the liquid so I had a sauce and served it over rice.

My husband and I loved it! I added chicken stock and a little more white wine. I didn’t add the olives because my husband doesn’t like them. Capers would be a good substitute.
