  • 1 pounds lean ground beef

I used 3/4 cup of mild salsa in place of the milk and the red sauce. I mixed in the eggs into the salsa then added the tortilla chips and set aside for about 10 minutes. After that, followed the recipe the rest of the way. YUMMY! Oh, and salsa at the topping versus ketchup.

I've made this twice this week already! I made it with ground turkey so I increased the taco seasoning (homemade seasoning) by quite a bit. Even the picky kids ate it! I also made it into 2 loaves and placed them on a foil covered cookie sheet just for ease. It took 45 min to cook at 350. I served it with salsa and sour cream. Thanks for another recipe to add to my arsenal!

I have fresh Basil and Black Olives to make it Extra :) I used 1 pound of 93% extra lean ground beef 1 big white onion, diced 3 large eggs A packet of low-sodium Taco Seasoning 3 handfuls of tortilla chips, crushed in my hands Extra Ground coarse Pepper Water instead of Milk to whisk the eggs with Taco Seasoning. I use surgical gloves whenever I massage raw meat with other spices/ingredients. I don't want it under my fingernails. Thanks for this recipe

I lightened this up by using 99% lean ground turkey and rolled oats instead of the tortilla chips and it came out great. There’s enough liquid with the milk, eggs, and taco sauce that it comes out really moist even with extra lean meat. I don’t have a loaf pan so I shaped the loaf on a non stick baking sheet and it was done in 30 minutes. I used hot taco seasoning and hot taco sauce and it had great heat if you like spicy.

Wow! Tastes just like tacos. I used 1# of ground beef and 1# of ground pork; increased ground tortilla chips to 1 1/3 cup; pepper jack to 1 cup; milk to 2/3 cup; salsa to 1/3 cup; and added 1/2 t of salt to compensate for the extra meat. It was so delicious! Thank you for a great recipe. It will be a family favorite.

Family really liked this. Baked mini meat Loafies in muffin pan (d'Marle) for 20 min. Ground Turkey meat plus italian sausage, Nacho Doritos, carmelized onion, enchilada sauce. Enchilada sauce mixed with ketchup for the tops.

I didn't have enough burger so I added some black beans. I also used Colby Jack cheese and only 1/4 c milk, salsa instead of taco sauce, added a half a green pepper - several substitutions, but just trying to use up what we have at home. The meatloaf turned out great, I don't like real spicy food, so the flavors worked for me. We will make this again, thanks!

This might be one of the best things to come out of this crazy pandemic. I had to substitute the cheese with cheddar, and only had 1.12 pounds of beef but still using all the same measurements it was still SO GOOD!!! Very moist and tender cooked for 55 minutes. I also had just shy of 1/4 cup of taco sauce and had, so filled the rest of the way with extra hot Valentino hot sauce. We like a little spice! Definitely was a good touch! And the crushed tortilla chips? This is a great substitute for breadcrumbs!! Mind is blown! I can’t got back to regular meatloaf after this guys! I served with some garlic sautéed spinach on side and. WHOAH! Healthy and delicious. Thank you for sharing this recipe with the world.

We thoroughly enjoyed this! It was bursting with flavor! I scaled this up for 4 pounds of ground venison. After reading some comments about blandness, I used about 9 oz. of Spicy Nacho Doritos, and added 10 oz. of Rotel (drained) to the meat mixture. I used plain non-fat Greek yogurt instead of milk, which created a thick sauce. I used Herdez Taqueria Roja Taco Sauce, but will probably make my own taco sauce next time.

First time followed as written, and very tasty! Second time I put my twist on it. Doubled the recipe. Used a pound of homemade spicy pork sausage 1 lb burger. Added cilantro, and finely diced jalapenos with the seeds. We love heat! Instead of the taco sauce instead subbed enchilada sauce. It turned out fantastic. Thank you for the amazing starting point!

I make my own Taco Seasoning Mix, otherwise I followed the recipe. I really like the flavors. I have my own Meatloaf recipe I’ve made for many years. I especially like it for sandwiches. I wasn’t sure this recipe would make for good sandwiches, but it does. Now it’s a tossup which Meatloaf to make.

So, I did change a couple things about this recipe as I did not have all the proper ingredients on hand at the time. I used marble jack instead of pepper jack cheese. And, I omitted the shredded tortilla chips. I think definitely if I were to make this recipe again I would not do the latter again. Missing those chips really changed the ratio of wet to dry ingredients and my meatloaf turned out a touch soggy, which was somewhat unpleasant to eat texturally. I also think it would have been improved by the correct cheese. I don't think this recipe is overly special or will blow anyone's taste buds out of the water but I think if made more closely to the original recipe is not a bad occassional addition to the dinner rotation. I would also recommend either halving or leaving out the red sauce on top of the meatloaf, and perhaps adding less onion as it was very onion-y.
