Catfish Tuscany Recipe

  • 4 fillets catfish (4 ounces each)
  • 1 tablespoon lemon juice
  • teaspoon salt
  • teaspoon black pepper
  • cup freshly grated Parmesan cheese
  • 2 tablespoons butter, softened
  • 1 tablespoons mayonnaise
  • 4 roma tomatoes or sun-dried tomatoes, thinly sliced

Directions

Step 1: Preheat your broiler to 500F (260C). Prepare a broiling pan by coating it lightly with nonstick cooking spray.

Step 2: Brush both sides of the catfish fillets with lemon juice, then season evenly with salt and black pepper. Place the fillets on the prepared pan with the flat side facing up.

Step 3: In a small bowl, combine Parmesan cheese, softened butter, and mayonnaise until smooth.

Step 4: Broil the fillets about 4 inches from the heat source for 6 minutes.

Step 5: Remove the pan from the oven and carefully turn the fillets over. Spread the Parmesan mixture evenly on top of each fillet.

Step 6: Arrange the tomato slices on top of the cheese-covered fillets.

Step 7: Return the pan to the broiler and cook for an additional 4-6 minutes, or until the fish flakes easily with a fork.

Absolutely fantastic! I made a few tweaks by adding 1/4 cup of breadcrumbs to the cheese mixture and opting to dice the Romas instead of placing whole tomatoes on the fish. I seasoned the diced tomatoes with Italian seasoning, minced garlic, salt, and pepper, then baked them separately to create a delightful relish/sauce to top the fish after the cheese had formed a delicious crust. Even my picky 3-year-old finished her plate! My husband, a seasoned cook and baker, declared it a keeper. Next time, I might experiment with feta or manchego cheese and add diced red onions to the tomato mixture for an extra burst of flavor. Can't wait to try it again for an even more amazing dish!

This recipe was fantastic! Both my husband and daughter absolutely adored it. I made a small adjustment by including 2 cloves of fresh garlic in the cheese mixture. While cooking the fish, I decided to top it with sliced tomatoes during the last minute or two. I also let it cook a bit longer to get a nice golden crust on the cheese before adding the tomatoes. I will definitely be making this again!

Wonderful recipe! I enhanced it by including 2 crushed cloves of garlic along with salt and pepper, and I peeled and seeded the tomatoes. I opted for tilapia instead of catfish and added 2 tablespoons of capers. This dish was perfect for a quick and effortless weeknight dinner, especially when paired with roasted fingerling potatoes. Delicious! The only issue I had was with the broiler pan - the amazing topping dripped off and ended up on the bottom section. Next time (and there will definitely be a next time soon), I will line a regular baking dish with foil to catch all the runoff.

This recipe is absolutely amazing! It's so versatile and can be used with almost any type of fish. We tried it with red snapper, and it turned out fantastic. Since the fillets were quite thick, I broiled each side before adding the mayo/parmesan/butter mixture. I thinly sliced the Roma tomatoes and seasoned them with a light sprinkle of salt and pepper before the final broil. Thank you for this fantastic recipe, it's definitely going to be a staple in our household.

I accidentally picked up tilapia instead of catfish because they were similar in thickness and displayed next to each other. Following the recipe faithfully, I found the dish to be too greasy due to the mayo and butter, although I have a sensitive stomach. Surprisingly, my husband absolutely loved it with the mayo and butter. It's a tough call for me, but I would give it 3.5 stars if I could. The saving grace was the fantastic flavor. My only gripe was the lack of crispiness; I plan to pan-fry it next time. Unfortunately, I couldn't achieve the desired crispiness by cooking it in the oven without risking overcooking the fish.
