Grilled Mahi Mahi Sandwich

Ingredients

  • 2 (5 ounce) mahi mahi fillets
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons Cajun seasoning
  • Salt and ground black pepper, to taste
  • 4 tablespoons mayonnaise
  • 1 teaspoon adobo sauce from chipotle peppers
  • 2 (2 ounce) whole wheat hamburger buns
  • 2 thick slices fresh tomato
  • 4 leaves romaine lettuce

Directions

  1. Preheat an outdoor grill to medium heat and lightly oil the grate.
  2. Season the mahi mahi fillets with lemon juice, olive oil, Cajun seasoning, salt, and pepper.
  3. Place the fillets on the preheated grill and cook for about 4 minutes on each side, or until the fish is white and flaky. Use an instant-read thermometer to ensure the center reaches at least 137F (58C).
  4. While the fish is cooking, split and toast the hamburger buns.
  5. In a small bowl, mix the mayonnaise and adobo sauce together. Spread the mixture evenly onto the toasted buns.
  6. Once the fish is ready, place the mahi mahi fillets on the buns.
  7. Top the fillets with fresh tomato slices and romaine lettuce leaves.
