Ingredients

  • 1 pound (1/2-inch thick) pork chops
  • Kosher salt
  • Freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 cup barbecue sauce
  • cup brown sugar
  • 2 limes, juiced
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped parsley, or to taste

Directions

Follow these simple steps for a delicious and juicy pork chop dish:

  1. Step 1: Season the pork chops on both sides with kosher salt and freshly ground black pepper to taste.
  2. Step 2: Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the pork chops in a single layer.
  3. Step 3: Cook the pork chops for 2 to 3 minutes per side, or until golden brown.
  4. Step 4: While the pork chops are cooking, whisk together barbecue sauce, brown sugar, lime juice, and garlic powder in a bowl.
  5. Step 5: Once the pork chops are seared, pour the sauce mixture over them and bring it to a boil.
  6. Step 6: Reduce the heat to medium, cover the skillet, and let the pork chops simmer for 4 to 5 minutes, or until cooked through.
  7. Step 7: Garnish with chopped parsley and serve hot.

I never would have imagined that squeezing fresh lime juice into barbecue sauce could elevate the flavor so much! We absolutely loved this recipe. My husband thought the sauce was a bit too sweet for his liking, despite me calling it Pork Chops in a SWEET Barbecue Sauce. I'll definitely be making this again, taking into account the recommendation from another reviewer to use less brown sugar.

Delicious but a bit chewy. Might give it another shot in the future, just not right away.
