Simply Seared Scallops Recipe
Sea Scallops with Lemon and Butter
Original Recipe Yield: 3 servings
Ingredients
- 12 sea scallops, tough muscles removed
- lemon, juiced
- Sea salt and ground black pepper, to taste
- 1 tablespoon olive oil
- 1 teaspoon butter
- 1 teaspoon lemon zest
Directions
Step 1: Pat the sea scallops dry with paper towels to remove any excess moisture.
Step 2: Season one side of the scallops with lemon juice, sea salt, and black pepper.
Step 3: Heat the olive oil and butter in a skillet over high heat.
Step 4: Place the scallops in the skillet, seasoned-side down. Allow them to cook until they are browned on the bottom, about 2 minutes.
Step 5: Season the scallops with the remaining lemon juice, salt, and pepper, then flip them over.
Step 6: Continue cooking the scallops for another 2 minutes, or until they are opaque throughout.
Step 7: Garnish with fresh lemon zest before serving.
Recipe Tip
For the best sear on your scallops, make sure they are very dry before cooking. Once placed in the pan, avoid moving them until it's time to flip.

I forgot to take a picture! This recipe is amazingly easy to make and incredibly delicious. I substituted Ghee for the butter, and it worked perfectly.
