Easy Stuffed Zucchini Recipe

This flavorful stuffed zucchini dish is a great choice for a hearty, healthy meal. With a combination of ground beef, zucchini, and savory ingredients, it's sure to please everyone at the table.

Ingredients

  • pound ground beef
  • 1 large zucchini, ends trimmed
  • 1 (16 ounce) jar spaghetti sauce
  • cup grated Parmesan cheese
  • cup bread crumbs
  • (6 ounce) can sliced black olives, drained
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese

Directions

  1. Preheat the oven to 350F (175C).
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until browned and crumbly, about 5 to 7 minutes. Drain the excess grease and transfer the beef to a large mixing bowl.
  3. Slice the zucchini in half lengthwise. Using a spoon, scoop out the flesh, leaving about a -inch thick shell. Chop the scooped-out zucchini flesh and add it to the beef mixture in the bowl.
  4. Stir in the spaghetti sauce, grated Parmesan cheese, bread crumbs, sliced black olives, and minced garlic. Mix everything together until well combined.
  5. Lightly stuff both zucchini halves with the beef mixture, pressing down gently to pack the filling.
  6. Place the stuffed zucchini halves in a baking dish and cover tightly with foil. Bake in the preheated oven for 45 minutes.
  7. After 45 minutes, remove the baking dish from the oven. Turn on the broiler and adjust the oven rack so it is about 6 inches from the heat source.
  8. Uncover the baking dish and sprinkle cup of shredded mozzarella cheese evenly over each zucchini half.
  9. Broil for about 5 minutes, or until the cheese is browned and bubbly.
  10. Serve hot and enjoy your delicious stuffed zucchini!
