Easy Stuffed Zucchini Recipe

This flavorful stuffed zucchini dish is a great choice for a hearty, healthy meal. With a combination of ground beef, zucchini, and savory ingredients, it's sure to please everyone at the table.
Ingredients
- pound ground beef
- 1 large zucchini, ends trimmed
- 1 (16 ounce) jar spaghetti sauce
- cup grated Parmesan cheese
- cup bread crumbs
- (6 ounce) can sliced black olives, drained
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
Directions
- Preheat the oven to 350F (175C).
- Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until browned and crumbly, about 5 to 7 minutes. Drain the excess grease and transfer the beef to a large mixing bowl.
- Slice the zucchini in half lengthwise. Using a spoon, scoop out the flesh, leaving about a -inch thick shell. Chop the scooped-out zucchini flesh and add it to the beef mixture in the bowl.
- Stir in the spaghetti sauce, grated Parmesan cheese, bread crumbs, sliced black olives, and minced garlic. Mix everything together until well combined.
- Lightly stuff both zucchini halves with the beef mixture, pressing down gently to pack the filling.
- Place the stuffed zucchini halves in a baking dish and cover tightly with foil. Bake in the preheated oven for 45 minutes.
- After 45 minutes, remove the baking dish from the oven. Turn on the broiler and adjust the oven rack so it is about 6 inches from the heat source.
- Uncover the baking dish and sprinkle cup of shredded mozzarella cheese evenly over each zucchini half.
- Broil for about 5 minutes, or until the cheese is browned and bubbly.
