Baked Stuffed Shrimp Recipe
Ingredients
- 2 (4 ounce) packages crushed buttery round crackers (such as Ritz)
- cup freshly chopped parsley
- 5 saltine crackers, crushed
- teaspoon celery salt
- 1 clove minced garlic
- 4 sea scallops, chopped
- cup chopped imitation crabmeat
- cup butter, melted
- cup white wine
- 20 jumbo shrimp, peeled and deveined
Directions
Step 1: Gather all ingredients and prepare your workspace. Preheat the oven to 375F (190C). Coat a baking dish with cooking spray.
Step 2: In a large bowl, combine the crushed buttery round crackers, chopped parsley, crushed saltines, celery salt, and minced garlic. Stir the ingredients together until evenly mixed.
Step 3: Add the chopped scallops, imitation crabmeat, melted butter, and white wine to the mixture. Stir everything together to form a well-combined stuffing.
Step 4: Take one shrimp and place it on a flat surface. Slice horizontally through the middle of the shrimp, being careful not to cut all the way through. Open the shrimp like a book and set aside. Repeat this process with the remaining shrimp.
Step 5: Stuff each shrimp with a heaping tablespoon of the stuffing mixture. Place the stuffed shrimp back-side up in the prepared baking dish.
Step 6: Add 1 to 2 tablespoons of water to the bottom of the baking dish to keep the shrimp moist while baking.
Step 7: Place the baking dish in the preheated oven. Bake for 15 to 18 minutes, or until the shrimp are opaque and the stuffing starts to brown.
