Connie's Zucchini "Crab" Cakes Recipe

Ingredients

  • 2 cups grated zucchini
  • 1 egg, beaten
  • 2 tablespoons butter, melted
  • 1 cup seasoned bread crumbs
  • cup minced onion
  • 1 teaspoon Old Bay Seasoning TM
  • cup all-purpose flour
  • cup vegetable oil for frying

Directions

Step 1: In a large bowl, combine grated zucchini, beaten egg, and melted butter (or margarine). Stir well to combine.

Step 2: Add seasoned bread crumbs, minced onion, and Old Bay Seasoning. Mix all ingredients together until evenly incorporated.

Step 3: Shape the mixture into small patties, making sure they are compact but not too thick.

Step 4: Dredge each patty in flour, ensuring they are lightly coated on all sides.

Step 5: In a medium skillet, heat vegetable oil over medium-high heat until hot. Fry the patties in the oil until they are golden brown on both sides, approximately 3-4 minutes per side.

Step 6: Remove the patties from the skillet and drain on a paper towel-lined plate to remove excess oil.
