Easy Mexican Goulash Recipe

Ingredients

  • 1 pound lean ground beef
  • 1 small onion, chopped finely
  • cup finely chopped green bell pepper
  • 1 tablespoon Worcestershire sauce
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 (9 ounce) package frozen corn
  • cup medium salsa
  • 2 tablespoons taco seasoning mix
  • 1 (8 ounce) package elbow macaroni

Directions

Step 1: Heat a large skillet over medium-high heat. Add the ground beef, chopped onion, green bell pepper, and Worcestershire sauce. Cook, stirring occasionally, for about 5 to 7 minutes, or until the beef is browned and crumbly. Drain any excess grease.

Step 2: Add the diced tomatoes, frozen corn, salsa, and taco seasoning to the beef mixture. Stir everything together, cover, and let it simmer while you prepare the macaroni.

Step 3: Bring a large pot of lightly salted water to a boil. Add the elbow macaroni and cook according to package instructions, usually about 8 minutes, or until firm to the bite. Drain the macaroni.

Step 4: Stir the drained macaroni into the beef mixture, making sure everything is well combined. Continue cooking for an additional 2-3 minutes, allowing the flavors to meld together.

This is a nice Americanized Mexican goulash-type dish. Quick and easy, the ingredients are stuff I have in the larder all the time. I made it just as the recipe specified and it was a snap to put together. You might want to add such optional toppings as grated cheese, sour cream, guacamole, chopped scallions, cilantro, etc. Thanks for a good recipe, Cacki!

Easy Mexican Goulash Haiku: "This one surprised us! Made it like a casserole, baked dinnertime." Made this as written (using small can Mexi-corn instead of the frozen, and rotini instead of elbows) a day ahead in a covered pyrex and when it came time to prepare, I put the cheese on top and baked it 350 for about 20 min. covered, then uncovered for another 5-10 min. Even though it was a very easy dish to prepare, this way made my evening infinitely easier, which I need b/c I have a newborn, and have to make meals in advance. But we were really quite astonished as to how good this was, for the ease of preparation and for having the ingredients almost always around.

I thought this was quite tasty, but I did change it up a little. I used at least another 1/2 Tbsp taco seasoning, canned corn, frozen 3 pepper blend (in place of green), and added probably 1 1/2-2 Tbsp of chipotle taco sauce. In addition, I turned it into a one pot recipe by using a large cast iron pan and adding uncooked noodles and 12 oz or so of chicken broth and let it all simmer together, covered, until noodles were done. I will probably use tomatoes with habeneros to spice it up more next time.

I made some twists to this. We like spicy! i used 1 lb of ground beef and 1 lb of farmer John hot sausage. Added an entire chopped onion, red and green bell peppers, rotel tomatoes, black beans, corn, cilantro, cumin. depending on your like for spicy, go ahead and add spicy Mexican tomato sauce, once i used enchilada sauce as it was all i had. You can kick up the spice more with red pepper flakes, cayenne pepper etc . I topped it with green onion or cilantro, what ever is on hand and those tortilla strips ( I'VE MADE MY OWN, CUT STRIPS OF CORN TORTILLAS AND FRY) or jalapeno salad toppings, sprinkle of cheese! Use an entire pound of noodles. Gets better a day later. Also freezes for another meal. Put in a bag then boil the bag later to cook. Guess I totally obliterated the original recipe. Just think Mexican. I can see cat's in it. Be creative. Add Mexican rice. I make that spicy too. Hmmm chill it and make it a salad. I've made Mexican salad.

I added a can of black beans and black olives. Once I added the noodles to the meat mixture, I placed it all in a 9x13 casserole dish, topped with cheese and baked 20 min. at 375. Delicious!!!!!

Yum! This was great! I added mushrooms bc we had them and believe you could add any veggies. If you do, just add additional salsa for liquid. I opt out on taco seasoning - too much sodium. I used rigatoni bc that's all we had - I think smaller noodles would be better. We baked it after mixing altogether, using about 3/4 C cheddar on top. Everyone enjoyed it!! Thanks for sharing this!

I’ve made this recipe several times, my family absolutely loves it. I also used red , yellow and orange bell peppers instead of the green, and it tasted amazing. I also serve it with sour cream and guacamole or plain avocado slices. Awesome goulash!!

I added sliced black olives, corn, seasoned black beans not drained, shredded cheddar cheese and a shake of red pepper flakes. So easy and delish! Might be my new “mercy meal”.

This recipe is amazing. I went ahead and put it all in a casserole pan and poured a layer of cheese on top and baked it for 30 minutes. So delicious. My family loved it!

This really was easy! And it made A LOT too. For my personal tastes, I added 2 tsp of minced garlic and a 15-oz can of black beans (drained), and served topped w/ shredded Monterrey Jack and chopped cilantro. Recipe doesn't say whether to drain tomatoes -- DON'T! -- the additional moisture helps the simmering process and makes for a good finished consistency.

Wow, delicious and super easy! My changes based on what I have: a whole orange pepper chopped (not green), a whole can of corn, and a whole envelope of taco seasoning. We used grated cheese, sour cream and chopped avocado for garnish. Next time I may swap out a can of black beans for the corn to up the nutritional value. But this is really tasty!

this was pretty good. I didn't have green chiles, I think that would've made it better. I did add cheese. it wasn't anything to rave about, but since it's so simple and quick, I'll probably make it again
