Sautéed Patty Pan Squash Recipe
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 sweet yellow onion (such as Vidalia), thinly sliced
- 4 patty pan squash, sliced into 1/2-inch-thick pieces
- 3 cloves garlic, crushed (or more to taste)
- 1 dash lemon pepper
- 1 cups packed fresh spinach (optional)
- 1/4 cup chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1/2 lemon, juiced
- 1 teaspoons grated Parmesan cheese
- Salt and ground black pepper to taste
Directions
Step 1: Gather all ingredients and prepare them as listed above.
Step 2: Heat olive oil and butter in a skillet over medium-high heat until foaming, about 1 to 2 minutes.
Step 3: Add the sliced onion and saut until it becomes tender and translucent, approximately 3 minutes.
Step 4: Add the sliced squash and crushed garlic. Season the mixture with a dash of lemon pepper. Saut the mixture until the squash becomes tender and can be easily pierced with a fork, about 5 to 6 minutes.
Step 5: Stir in the spinach, parsley, and basil into the squash mixture. Continue to saut for another minute until the spinach wilts.
Step 6: Squeeze the juice of half a lemon over the mixture and sprinkle the Parmesan cheese on top. Stir well to combine the flavors.
Step 7: Season the mixture with salt and ground black pepper to taste. Give everything one last stir and remove from heat.
Cook's Note
This recipe can also be made with yellow squash or zucchini, and it turns out just as delicious. Feel free to experiment with different types of squash.

This side dish was delicious! It was incredibly fresh, easy to make, and visually appealing with its vibrant colors. The addition of parmesan was a delightful touch. The only downside was that my husband and I felt the flavors were a bit bland. While I initially followed the recipe closely the first time, in the future, I plan to spice it up with more seasonings. Despite this, it was still a tasty dish overall!

Even better than grandma's! This dish was a huge hit with my southern in-laws. Grandma herself admitted that it was superior to her own recipe. I decided to amp up the flavor with extra lemon pepper (around 3 or 4 tablespoons, season to taste), an additional clove of garlic, and extra parmesan cheese. I squeezed in the lemon juice right at the end, and it made a world of difference - the result was absolutely fantastic.

I wish the preparation time wasn't two or three times longer than advertised, but it was definitely worth it - the dish was incredibly delicious! The only addition I made was adding 1 teaspoon of Bacon Smoked Sea Salt. The lemon added a refreshing touch to the dish and gave it a distinct Italian flavor. I appreciate the fresh basil - it was a must-have for this recipe.

The dish is indeed delicious, but don't be fooled by the recipe's claim of a quick 5-6 minute sauté. It actually takes closer to 20 minutes to cook properly. Also, keep in mind that patty pan squash can have a slightly bitter taste.

This dish was absolutely amazing! Even my teenagers enjoyed it! I added extra lemon pepper (about 1 tablespoon) and used only spinach. The flavor was so rich and delightful.

I found this recipe to be simple and refreshing, quick and easy to prepare. It allows the patty pan squash to truly stand out. I opted for spinach and would highly suggest it for both its flavor and visual appeal.
