Waffled Falafel Recipe

Ingredients

  • Cooking spray
  • 2 (15 ounce) cans garbanzo beans (chickpeas), drained and rinsed
  • 1 medium onion, chopped
  • 2 large egg whites
  • cup chopped fresh cilantro
  • cup chopped fresh parsley
  • 3 cloves roasted garlic, or more to taste
  • 1 tablespoons all-purpose flour
  • 2 teaspoons ground cumin
  • 1 teaspoons salt
  • 1 teaspoon ground coriander
  • teaspoon ground black pepper
  • teaspoon cayenne pepper
  • 1 pinch ground cardamom

Directions

  1. Preheat your waffle iron according to the manufacturer's instructions. Once preheated, lightly spray the inside with cooking spray.
  2. In a food processor, process the garbanzo beans until coarsely chopped.
  3. Add the chopped onion, egg whites, cilantro, parsley, garlic, flour, cumin, salt, coriander, black pepper, cayenne pepper, and cardamom to the garbanzo beans in the food processor. Pulse the mixture, scraping down the sides of the bowl as needed, until the batter resembles a coarse meal.
  4. Transfer the falafel batter into a bowl and stir it with a fork to ensure everything is well combined.
  5. Spoon about cup of the falafel batter into each section of the preheated waffle iron. Close the waffle iron and cook until the falafel is evenly browned, about 5 minutes.
  6. Once cooked, carefully remove the falafel from the waffle iron. Repeat the process with the remaining batter until all falafel are cooked.
