Air-Fried Roasted Sweet Peppers and Onions Recipe

Ingredients:

  • 1 cup sliced green bell pepper
  • 1 cup sliced red bell pepper
  • 1 cup sliced red onion
  • 1 tablespoon olive oil
  • teaspoon kosher salt
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice

Directions:

  1. Preheat the air fryer to 350F (175C).
  2. In a large bowl, combine the green and red bell peppers, red onion, olive oil, and kosher salt. Toss well to coat.
  3. Transfer the mixture to the air fryer basket, spreading it out evenly.
  4. Cook for 7 to 9 minutes, stirring halfway through, until the peppers and onions are tender and starting to brown.
  5. Once done, remove the mixture from the air fryer and transfer it to a serving bowl.
  6. Gently toss the cooked peppers and onions with fresh cilantro and lime juice until well combined.

Recipe Tip:

Feel free to use any combination of red, green, and/or yellow bell peppers to suit your taste. This recipe is flexible!

Five stars for this brilliant recipe! I prepared it for 6 servings, which only took me around 15 minutes. It worked perfectly as a side dish, but truly elevated the flavors of my fajitas and tacos. The leftovers also added a delightful twist to my risotto.

It took much longer to cook my dish, over 30 minutes. Next time, I will attempt 400 degrees for at least 15 minutes to see if it cooks faster. However, the taste was still great.

Fantastic! My dish cooked in 12 minutes, but I prefer my onions extra crispy. It pairs well with a variety of main dishes such as steak, chicken, fish, or even smoked sausage, which is what I served it with.
