Fricase de Pollo Recipe
Ingredients
- 1 tablespoon extra-virgin olive oil
- large red bell pepper, diced
- red onion, diced
- 4 cloves garlic, smashed
- 2 tablespoons tomato paste
- 2 cups water, or as needed
- 6 skinless chicken leg quarters, separated into thighs and drumsticks
- Salt to taste
Directions
Step 1: Heat the olive oil in a pressure cooker over medium heat. Add the diced red bell pepper and onion. Stir and cook for about 5 minutes until the onion softens and becomes translucent.
Step 2: Add the smashed garlic and continue cooking until it turns golden and fragrant.
Step 3: Dissolve the tomato paste in 1 cup of water and pour it into the pressure cooker, stirring to combine with the vegetables and garlic.
Step 4: Place the chicken thighs and drumsticks into the pressure cooker, arranging them so the pieces are evenly spaced. Add enough water to nearly cover the chicken.
Step 5: Seal the pressure cooker and bring it up to pressure over high heat. Once pressure is reached, reduce the heat to low, maintaining full pressure, and cook for 15 minutes.
Step 6: Turn off the heat and allow the pressure to drop naturally for about 20 minutes. Carefully open the pressure cooker and season the chicken with salt to taste.

To enhance the authentic taste, include 2 bay leaves in the "sofrito" blend of onions, bell peppers, garlic, and tomato sauce before sealing the pressure cooker. For an extra delicious touch, I recommend adding olives stuffed with pimentos once the chicken is fully cooked.

This dish turned out amazing! I stuck to the recipe but substituted chicken broth for water, and also incorporated the advice to add bay leaves while cooking and green olives at the finish. My boyfriend was extremely impressed! Thanks for sharing!

I'm sorry, but it was too bland for me. It could use some black pepper or something to give it more flavor. Still, thanks for sharing the recipe. I wish I had enjoyed it more.
