Portuguese Cod Fish Casserole Recipe

Ingredients

  • 2 pounds salted cod fish
  • 5 large potatoes, peeled and sliced
  • 3 large onions, sliced
  • cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoons crushed red pepper flakes
  • 1 teaspoon paprika
  • 3 tablespoons tomato sauce

Directions

  1. Soak the salted cod in cold water overnight or for at least a few hours. After soaking, drain the water and repeat the process. This will help to reduce the salt content of the fish.
  2. Bring a large pot of water to a boil. Carefully cook the cod for 5 minutes, then drain and allow it to cool. Once cooled, break the cod into large pieces and set aside.
  3. Preheat your oven to 375F (190C). Lightly grease an 8x11-inch casserole dish.
  4. Start layering the casserole: place half of the sliced potatoes in the dish, followed by all of the cod and onions. Finish with the remaining potato slices on top.
  5. In a small bowl, mix together the olive oil, minced garlic, chopped parsley, red pepper flakes, paprika, and tomato sauce. Stir well until combined.
  6. Pour the olive oil mixture evenly over the casserole layers.
  7. Cover the casserole and bake in the preheated oven for 45 minutes, or until the potatoes are tender and cooked through.

The meal was absolutely delicious, reminiscent of dining out at a restaurant. My wife and I decided to add our own twist to make it even tastier. Firstly, we included a bottle of white cooking wine, along with a green pepper and a red pepper. Secondly, in a separate pan, we sautéed the onions, green pepper, and red pepper before combining all the ingredients in a casserole dish. Lastly, we parboiled the potatoes to achieve a crispy texture akin to Portuguese potato chips.

We didn't find this dish enjoyable overall, but I appreciate the concept of layering potatoes, cod, and onions. Unfortunately, the sauce that was poured on top didn't appeal to us. We plan to give it another try using a different sauce next time.

Rewritten review: This dish turned out delicious! Instead of using salted cod, we opted for frozen cod and soaked it in salted water for an hour to defrost. We decided to omit the potatoes and added extra onions and garlic. The flavors were amazing! We prepared it the day before and reheated it in a covered frying pan, which allowed the dish to absorb even more flavor. It tasted fantastic after marinating for a day.

I followed the recipe closely, but substituted frozen cod for salted cod, and the result was delightful. I believe this recipe could work well if halved. Additionally, I included diced tomatoes, which enhanced the flavor of the dish. Initially, I felt that 2 lbs of cod would be excessive, but it turned out to be just the right amount, if slightly on the lighter side. I will definitely be making this recipe again!

I have prepared this dish several times already. Following others' advice, I opted for fresh or frozen cod instead of salted, and it turned out fantastic. My family really enjoys it!

I used thawed frozen cod, not salted, for this recipe. I had slightly less cod than called for so I adjusted the recipe accordingly. I added an extra tablespoon of tomato sauce and a few drops of Habanero sauce. The result was awesome! I might make the sauce thicker next time by increasing the amount of tomato sauce used.
