Kelly's Pressure Cooker Beef Stew Recipe

Ingredients

  • 2 tablespoons vegetable oil
  • cup all-purpose flour
  • 1 pounds beef stew meat, cubed
  • Salt and ground black pepper to taste
  • 1 large onion, chopped
  • 2 tablespoons white sugar
  • 2 cups water
  • 2 cubes beef bouillon
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 tablespoon dried parsley
  • 1 tablespoon dried basil
  • 4 potatoes, peeled and cut into 2-inch pieces
  • 2 cups peeled baby carrots

Directions

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Place flour in a resealable plastic bag. Add half of the beef cubes and shake to coat. Remove beef cubes, shaking off any excess flour. Add the beef cubes to the skillet and repeat the process with the remaining beef cubes. Season the beef with salt and black pepper.
  3. Stir in the chopped onion and cook, stirring often, until the beef is browned on all sides and the onion becomes translucent, about 5 minutes. Sprinkle in the sugar and mix well.
  4. In a pressure cooker, combine water, bouillon cubes, garlic, bay leaf, parsley, and basil. Heat over medium-high until the bouillon cubes dissolve.
  5. If your pressure cooker has a rack, place it in the cooker. Layer the potatoes, carrots, and beef mixture inside the pressure cooker. Season with additional salt and black pepper.
  6. Close the pressure cooker securely and place the pressure regulator over the vent according to the manufacturer's instructions. Bring the cooker up to full pressure, indicated by a steady flow of steam and a whistling sound.
  7. Reduce the heat to medium-low and allow the regulator to gently rock, maintaining full pressure. Cook for 8 minutes.
  8. Let the pressure release naturally for about 15 minutes, according to the manufacturer's instructions. Once the pressure has fully released, unlock the lid and remove it.
  9. Transfer the beef and vegetables to a serving bowl. Pour the pan juices over the top and serve hot.

I just made this dish tonight and it was absolutely amazing! Like many cooks, I made a few adjustments - I skipped the sugar, added 3 stalks of celery cut into 2-inch pieces, and didn't coat the meat with flour. Since I had almost double the amount of meat, I browned it in two batches before adding everything else to the pot. I had to remove some liquid to ensure there was enough space at the top of my 6-quart pot. I thickened the stew with cornstarch, which worked perfectly. These were all minor tweaks to a fantastic beef stew recipe that went from prep to table in just 1 hour! I love it!

I had a great experience using this product in my small stovetop pressure cooker (Bella brand). Even though I added ingredients up to the recommended 2/3 capacity, it worked perfectly. I included 8oz of quartered white mushrooms, 1 cup of 1/2" chopped celery, and 2 tablespoons of cooking sherry.

I have tried making this recipe multiple times, but I recommend using less potato. Unfortunately, my most recent attempt was not successful. I used a new Instant Pot, and encountered an issue where the message "Burn" appeared on the display and the lid would not seal properly. After doing some research, I discovered that newer Instant Pots are more sensitive to liquid levels, and the amount of liquid in this recipe is not sufficient for these models. With my original LUX model, I never experienced any problems like this.
