Pressure Cooker Sweet Potatoes Recipe

This recipe serves 6 people and delivers a deliciously sweet and savory side dish using a pressure cooker. The sweet potatoes are steamed to perfection and paired with a rich orange syrup for a comforting and flavorful meal. Here's how to make it:

Ingredients

  • 2 large sweet potatoes, peeled
  • teaspoon salt, or to taste
  • cup dark brown sugar
  • teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • 1 cup orange juice
  • 2 tablespoons unsalted butter, cut into pieces

Directions

Step 1: Start by cutting the sweet potatoes in half lengthwise. Then, slice them into 1/4-inch thick pieces and place them into the steamer basket of a pressure cooker. Sprinkle the sweet potato slices with salt.

Step 2: In a small bowl, combine the dark brown sugar, ground cinnamon, and ground nutmeg. Stir until well mixed.

Step 3: Add the orange juice to the pressure cooker. Be sure to follow the manufacturer's instructions for your specific model (for example, if your pressure cooker requires a minimum of 2 cups of liquid, use 1 cup of orange juice and 1 cup of water).

Step 4: Place the trivet and steamer basket with the sweet potatoes into the pressure cooker. Sprinkle the brown sugar mixture over the sweet potatoes and dot with pieces of unsalted butter.

Step 5: Secure the lid of the pressure cooker and bring it to full pressure (15 psi) over high heat, following the manufacturer's instructions. Once pressure is reached, reduce the heat to low and cook for 7 minutes.

Step 6: After 7 minutes, quickly release the pressure according to your pressure cooker's instructions. Be careful when doing so. Reserve the cooking liquid for later use.

Step 7: Remove the steamer basket from the cooker and carefully transfer the sweet potatoes to a serving dish.

Step 8: Return the cooker to the stovetop and bring the reserved cooking liquid to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 5 to 7 minutes, stirring frequently, until the cooking liquid has reduced and become syrupy. It should be thick enough to coat the back of a spoon.

Step 9: Pour the syrup over the sweet potatoes and serve immediately.

I used four sweet potatoes, so I increased the cooking time to 9 minutes. Instead of transferring the liquid to another pan to reduce it, I utilized the sauté function on my Instant Pot. The end result was a hit with everyone, so we will definitely be making this dish again.

Was out of orange juice...substituted with pineapple juice. These were absolutely fantastic. They have become a new favorite for me.
