Grilled Halloumi with Herbed Berry Salsa Recipe

Ingredients:

  • 4 ounces fresh blueberries
  • 3 ounces red currants
  • 3 tablespoons chopped fresh mint, divided
  • 3 tablespoons chopped fresh cilantro, divided
  • 1 tablespoon fresh marjoram, stems removed
  • 1 habanero pepper, seeded and minced
  • 2 tablespoons olive oil
  • 2 tablespoons agave syrup
  • 2 limes, divided
  • cup cashews
  • 8 ounces halloumi cheese, cut into 8 slices

Directions:

  1. In a mixing bowl, combine the blueberries and red currants.
  2. Add 2 tablespoons of mint, 2 tablespoons of cilantro, the marjoram, habanero pepper, olive oil, agave syrup, and the juice of one lime. Mix everything together and set aside to allow the flavors to meld.
  3. Place a nonstick griddle or skillet on medium-high heat. Add the cashews and cook, stirring often to prevent burning, for about 8 to 10 minutes, or until they are lightly browned. Transfer the cashews to a plate and set them aside.
  4. Reduce the heat to medium. Place the halloumi cheese slices on the griddle and cook for 2 to 3 minutes per side, until golden brown and slightly crispy on the edges.
  5. Once cooked, place the halloumi cheese slices on a serving plate. Top with the berry salsa mixture and garnish with the remaining 1 tablespoon of mint and cilantro.
  6. Chop the cooked cashews and sprinkle them over the halloumi and salsa for a crunchy texture.
  7. Cut the second lime into wedges and serve alongside the dish. Serve immediately and enjoy!
