Ingredients

This recipe yields 12 servings.

  • 1 (15.25 ounce) can whole kernel corn, with liquid
  • 1 (14 ounce) can cream-style corn
  • 1 (8 ounce) package cream cheese, softened
  • 1 stick butter, softened
  • 1 (8.5 ounce) package cornbread mix (such as Jiffy)
  • cup chopped cauliflower
  • 1 tablespoon white sugar

Directions

  1. Preheat the oven to 350F (175C).
  2. In a large bowl, combine the whole kernel corn (with liquid) and cream-style corn. Gently mix until both are well incorporated.
  3. Add the softened cream cheese and butter to the corn mixture. Stir until everything is smoothly combined.
  4. Next, add the cornbread mix to the bowl. Stir well until the mixture is fully incorporated.
  5. Mix in the chopped cauliflower until just blended.
  6. Transfer the mixture into a 9x13-inch casserole dish. Sprinkle the top evenly with the sugar.
  7. Bake in the preheated oven for approximately 30 minutes, or until the dish is lightly browned on top.
  8. Allow the casserole to cool for 10 minutes before serving.
