Corn Casserole with Cauliflower Recipe

Ingredients
This recipe yields 12 servings.
- 1 (15.25 ounce) can whole kernel corn, with liquid
- 1 (14 ounce) can cream-style corn
- 1 (8 ounce) package cream cheese, softened
- 1 stick butter, softened
- 1 (8.5 ounce) package cornbread mix (such as Jiffy)
- cup chopped cauliflower
- 1 tablespoon white sugar
Directions
- Preheat the oven to 350F (175C).
- In a large bowl, combine the whole kernel corn (with liquid) and cream-style corn. Gently mix until both are well incorporated.
- Add the softened cream cheese and butter to the corn mixture. Stir until everything is smoothly combined.
- Next, add the cornbread mix to the bowl. Stir well until the mixture is fully incorporated.
- Mix in the chopped cauliflower until just blended.
- Transfer the mixture into a 9x13-inch casserole dish. Sprinkle the top evenly with the sugar.
- Bake in the preheated oven for approximately 30 minutes, or until the dish is lightly browned on top.
- Allow the casserole to cool for 10 minutes before serving.
