Ground Beef and Cabbage Casserole Recipe

Ingredients
- 1 (28 ounce) can fire-roasted diced tomatoes
- 2 pounds ground beef
- 1 medium onion, diced
- 2 (10.75 ounce) cans condensed tomato soup
- 1 medium head cabbage, cored and thinly sliced
- Cooking spray
Directions
- Preheat the oven to 400F (200C). Lightly spray a casserole dish with cooking spray.
- Place the diced tomatoes in a colander over a bowl to drain. Reserve the juice.
- In a large skillet, heat over medium-high heat. Add ground beef and cook, stirring occasionally, until browned and crumbly (5 to 7 minutes). Transfer the cooked beef to a large bowl.
- Drain excess grease from the skillet, leaving a small amount. Add diced onions to the skillet and cook over medium-low heat for about 15 minutes, or until they become soft and begin to caramelize.
- Remove the skillet from heat. Add the cooked onions, drained tomatoes, and condensed tomato soup to the bowl with the ground beef. If needed, add some of the reserved tomato juice to thin the mixture slightly.
- In the prepared casserole dish, place the sliced cabbage, mounding it in the center. Pour the beef and tomato mixture over the cabbage, covering it evenly.
- Cover the casserole dish tightly with foil and bake in the preheated oven for 1 hour.
- After 1 hour, remove the foil and continue baking for an additional hour, allowing the flavors to meld and the casserole to turn golden brown on top.
- Once baked, remove the casserole from the oven and let it cool for about 20 minutes before serving. Serve hot and enjoy!
Cook's Note
This casserole can be made ahead of time and reheated. It often tastes even better the next day. For future use, cut into individual serving sizes, wrap with plastic wrap, place in a freezer bag, and freeze.

I decided to make a smaller portion of this recipe by cutting it in half. I also substituted a bag of coleslaw mix for a head of cabbage. After cooking it covered for an hour, I removed the foil and cooked it for an additional 15 minutes. I seasoned the ground beef with salt while cooking. I really liked this simple meal, and I paired it with some No Yeast "Everything" Dinner Rolls.
