Chicken Noodle Casserole Recipe
Ingredients
- 4 skinless, boneless chicken breast halves
- 6 ounces egg noodles
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 cup sour cream
- Salt to taste
- Ground black pepper to taste
- cup butter
- 1 cup crumbled buttery round crackers
Directions
Step 1: Preheat the oven to 350F (175C).
Step 2: In a large pot, bring water to a simmer over medium heat. Add the chicken breasts and poach them for about 12 minutes, or until they are no longer pink in the center. Once cooked, use a slotted spoon to remove the chicken and set it aside. Keep the cooking water in the pot.
Step 3: Bring the chicken cooking water back to a boil. Add the egg noodles and cook for about 10 minutes, or until they are tender but still firm. Drain the noodles and transfer them to a large bowl.
Step 4: Cut the poached chicken into bite-sized pieces and add them to the noodles.
Step 5: In a separate bowl, combine the cream of mushroom soup, cream of chicken soup, and sour cream. Season with salt and black pepper to taste. Stir until well combined.
Step 6: Add the soup mixture to the chicken and noodle mixture. Gently stir everything together until evenly combined.
Step 7: Transfer the mixture into a 2-quart baking dish.
Step 8: In a small saucepan, melt the butter over low heat. Once melted, remove from the heat and stir in the crumbled buttery crackers. Sprinkle this mixture evenly over the casserole.
Step 9: Place the casserole in the preheated oven and bake for about 30 minutes, or until it is heated through and the top is golden brown.

I made a few enhancements to the recipe to give it more flavor. I included a couple of cloves of garlic, 2 stalks of finely diced celery, and 1/2 a small onion, also finely diced. Additionally, I added around 1/2 tsp. of thyme and about half a bag of frozen mixed vegetables. I extended the cooking time to 45-50 minutes to ensure the added vegetables cooked thoroughly. To prevent the soup from drying out, I poured in around 3/4 can of milk for extra moisture. With these modifications, I rate it 5 stars. The taste was superb, and I plan to make it again many times.

I absolutely love this recipe! The only change I make is boiling my noodles in chicken broth for added flavor. I also like to sprinkle a bit of cheese on top for an extra special touch.

Rewritten review: I tried a recipe that many said was bland, but I added red onion, garlic, red pepper, and sautéed cubed chicken to give it more flavor. Instead of just water, I used chicken broth for the noodles. Following the recipe, I sprinkled 1/2 cup of parmesan and 3/4 cup of frozen mixed veggies on top before baking it to get a crispy finish. Oh my goodness, it turned out incredibly tasty! I will definitely be making it again.

I tried making this dish once following the original recipe and it turned out great. Encouraged by the many recommendations, I decided to enhance the flavor and save time. Here's what I did: 1. Added garlic. 2. Used pre-cooked chicken. 3. Followed the suggestion to add onion by using a packet of Lipton's onion soup mix. 4. Crushed two packs of Ritz crackers to mix with the butter topping. 5. Added 1/2 cup of milk for a creamier sauce. 6. Baked for 40 minutes for a crunchier topping. The final outcome was incredibly flavorful, although the onion taste was a bit too strong for my liking, so I may reduce the amount next time.
