Ingredients

Salad:
- 1 large head romaine lettuce, chopped
- 1 large head bok choy, chopped
- cup sliced almonds
- cup sunflower seed kernels
- 2 (3 ounce) packages ramen noodles, crumbled (flavoring packets reserved for other use)
- 2 (15 ounce) cans mandarin oranges, drained
Dressing:
- 2 tablespoons butter
- cup olive oil
- cup white sugar
- cup vinegar
- 1 tablespoon soy sauce
Directions
Step 1: In a large bowl, combine the chopped romaine lettuce and bok choy. Add the sliced almonds and sunflower seed kernels to the mixture.
Step 2: Crumble the ramen noodles and sprinkle them over the lettuce mixture. Add the drained mandarin oranges and gently toss everything together to combine.
Step 3: In a small skillet, melt the butter over medium heat. Allow the butter to cook until it becomes lightly browned, about 2-3 minutes. Remove from heat and set aside.
Step 4: In a separate bowl, whisk together the olive oil, vinegar, sugar, and soy sauce until the sugar dissolves and the mixture is smooth.
Step 5: Once the butter has cooled slightly, whisk it into the dressing mixture, combining everything thoroughly.
Step 6: Drizzle the dressing over the salad and toss everything gently to coat. Serve immediately for the best texture and flavor.

I followed the recipe exactly, except I didn't have mandarin oranges so I used pomegranate seeds instead. It turned out fantastic!
