Clean-Eating Potato and Corn Chowder Recipe
This creamy and hearty chowder is packed with flavor, combining Yukon Gold potatoes, sweet corn, and aromatic herbs. Perfect for a cozy meal!
Ingredients
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 1 ribs celery, diced
- 3 pounds Yukon Gold potatoes, peeled and diced
- 1 (16 ounce) package frozen sweet corn
- 1 cube vegetable bouillon (such as Rapunzel)
- 1 teaspoon dried marjoram
- 1 teaspoon dried parsley
- Salt and ground black pepper to taste
- 2 tablespoons whole wheat pastry flour
- 2 cups unsweetened almond milk
- 1 cups chicken stock
Directions
- Heat olive oil in a Dutch oven over medium heat. Add diced onion and celery, and cook until they become translucent and soft, about 5 to 7 minutes.
- Stir in the diced potatoes, cover the pot, and cook until the potatoes begin to soften, approximately 5 minutes.
- Mix in the frozen corn, vegetable bouillon cube, marjoram, parsley, salt, and black pepper. Cover the pot and cook for 2 minutes, or until the corn is warmed through.
- Sprinkle in the whole wheat pastry flour, cover again, and cook for another 2 minutes to allow the flour to incorporate.
- Pour in the almond milk and chicken stock, stirring to combine. Cover the pot and bring the mixture to a boil.
- Once boiling, reduce the heat and simmer for 15 to 20 minutes, or until the potatoes are tender and the soup has thickened.
- Remove the pot from heat and allow the chowder to cool slightly, about 5 minutes.
- For a thicker consistency, you can blend about half of the soup using an immersion blender, leaving some chunks of potatoes and corn for texture.

I sprinkled some Trader Joe's 21 seasoning salute on top. But to be honest, I add it to pretty much everything I eat :)

I made this soup with a mix of red and yellow fingerling potatoes along with two small sweet potatoes, and the colors turned out beautifully. I didn't have all the recommended seasonings, so I used fresh basil instead. I appreciated that the soup wasn't overly thick or heavy, making it perfect for a summer evening. I'm even considering trying it cold tomorrow!
