Poppy Seed Chicken Casserole Recipe
Chicken Casserole with Cheddar and Cracker Topping
Ingredients
- 4 skinless, boneless chicken breast halves
- 1 sleeve buttery round crackers (such as Ritz), crushed
- cup butter, melted
- 1 teaspoon poppy seeds, or more if desired
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 (8 ounce) sour cream
- 2 cups shredded Cheddar cheese
Directions
- Begin by gathering all the ingredients to ensure everything is on hand.
- Place the chicken breasts into a large pot. Cover the chicken with water and bring to a boil over high heat. Once boiling, reduce the heat to medium, cover the pot, and let the chicken simmer for about 20 minutes, or until the chicken is no longer pink in the center. Afterward, drain the chicken and shred it using two forks.
- Preheat your oven to 350F (175C). While the oven is heating up, combine the crushed crackers, melted butter, and poppy seeds in a large bowl until well mixed. Set aside.
- In a separate medium-sized bowl, stir together the condensed cream of chicken soup and sour cream until smooth. Pour half of this mixture into a 9-inch square baking dish.
- Spread the shredded chicken evenly over the soup mixture in the baking dish.
- Pour the remaining soup mixture over the chicken layer. Then, sprinkle the shredded Cheddar cheese evenly on top of the casserole.
- Finally, sprinkle the prepared cracker mixture over the cheese layer, covering it evenly.
- Bake the casserole in the preheated oven for 25 to 30 minutes, or until the cheese is melted and the sauce is bubbling.

This is the chicken casserole I grew up with, except we leave out the cheese. One tip from years of making it for those of you who work outside the home full time: put the boneless skinless chicken breasts (frozen works great) in the crockpot with a cup of water on low all day... then you don't have to boil the chicken when you get home and it is so tender and easy to shred with two forks. Also, I used just 2 Tablespoons butter; it works fine for a sleeve of buttery crackers.

We’ve loved this dish for years but ours has no cheese. I also assemble it differently. I mix the chicken into the combined sour cream and soup. First into my casserole dish is a layer of prepared chicken flavor rice a roni. Next is frozen broccoli florets, steamed in microwave . Then all the chicken mixture, and then topped with the crackers, butter and poppy seeds. Yummy and a complete meal!

Amazing just as it is but I changed a few things and with my changes would give it 6 stars!! I added about 3/4 cup thawed peas/carrots to the sour cream / soup mixture as well as about a tbsp or 2 of Italian Seasoning. Then to the cracker/butter mixture I also added a tbsp or 2 of Italian seasoning and about a 1/4 cup of parmesan cheese. Absolutedly amazing!!!

I make this all the time. I double the crackers, I do 3/4 C melted butter, family size can of cream of chicken, and 5-6 chicken breast, and 1.5 or 2x the sour cream. I don't layer the same way. I mix chicken and cream sauce together, pour half in my casserole dish, sprinkle half the cheese, dump in the rest of the chicken mixture, then the rest of the cheese. Then cracker topping goes on last. I also love poppy so I put more in the cream sauce and less in the topping. We love to serve this over white rice! It's a household staple.

I just mix everything together and put it in the casserole dish. I add a bit of onion powder, garlic powder & poppy seeds to the mix. Top with the cracker mixture. I also sometimes split it between 2 smaller dishes (without crackers) & freeze one.

I have been making this for years, it's always been a family favorite! But I have never put any cheddar cheese in it. I put 1 can of cream of chicken & 1 can of cream of celery soup & mix it with the sour cream and add the shredded chicken & mix all together and place in a 13x9 pan. Top with the poppy seed & crushed crackers. They gobble it up!

Absolutely a good recipe. I did follow it but I want to provide a couple clarifications. With the world and changing packaging . So for one sleeve of buttery round crackers please use 32 to 36 crackers. Also the recipe calls for four skinless boneless chicken breast tabs. Mine were very very large so I would suggest quantifying this by ounces but I don’t know how many. I also made a mistake when I put the recipe together instead of layering the sauce and then the chicken in the sauce, I mixed it all together and it was absolutely fantastic. Those of you that have a KitchenAid mixer I just threw the hot cooked chicken breasts in that to shred it and then I threw in the soups and the sour cream and it made it very easy. Excellent dish. We had it with rice

After reading suggestions from other raters, I added sautéed onion and garlic and tossed in some baby portabella mushrooms. I mixed that in with the shredded chicken and put all of that on the bottom of the pan. I topped it off with the soup & sour cream mixture, omitted the cheese and finished with the cracker crumbs. It was really good.

I made this recipe and forgot to put in the 2nd layer of the soup mixture over the chicken. It was too late when I noticed AFTER I put the Cheddar cheese on. Wasn't sure how it would turn out, but it turned out great! You can also cut this recipe down in 1/2 to put in an 8X8 baking dish because I was only feeding 2 of us. I also used SHARP cheddar cheese because that was all I had and I liked it better than regular cheddar cheese! Will make again and again...

This really is a good recipe....needed pepper for us. The old school recipes do not call for shredded cheese so i do not usually use it. Cut the butter in half and add a can of cream of celery soup for more flavor and sauce for the chicken (and rice if you serve this on top of it)) Also, don't add the poppy seeds to the cracker mix, add it to your condensed soup mix instead so you get more of the flavor and look of poppy seed chicken. Sprinkle some on top of course before baking. Still, this one is a keeper over-all.

I mix the condensed cream of chicken soup, sour cream, shredded Cheddar cheese together and then add chopped onion, cubed potatoes and vegetables to the mixture before topping. We love this on mashed potatoes or biscuits.

I am not a casserole girly. I prefer to make dinner as hard on myself as possible 😂😂😂 that being said I adore this recipe and so do my kids. My biggest change is adding lemon zest and lemon juice - lemon zest in the cracker topping, juice in the sour cream/soup mixture; a bit extra of lemon zest sprinkled over the chicken before topping w cheese. The lemon brightens this dish!

I’m trying Greek yogurt for half of the sour cream. We’ll see how it turns out. Also, I’m omitting the cheddar cheese and preparing the chicken by cooking it in small chunks. I then mixed the soup, sour cream, Greek yogurt, poppy seeds together and poured it over the chicken along with a bag of frozen mixed vegetables which I had warmed up with the chicken. I bake that mixture for half an hour and top it with the cracker and melted butter mixture and bake for 10 more minutes.

I think this recipe makes the perfect comfort food! The ingredients are so simple, but are magic when combined. I did omit the cheese. This is the only recipe where I will say it didn’t eat it!The only addition I made was to reduce the water when boiling the chicken and to add a generous helping of minced onion to give the chicken some extra flavor while cooking. I kept it covered and it steamed/boiled without the need for submerging it. I serve it over white rice and it is fantastic!

Great recipe as is. I love lemon so I add the zest of one lemon and the lemon juice to the soup and sour cream!
