Instant Pot Keto Ranch Chicken Recipe
This hearty and delicious chicken bacon ranch casserole is perfect for a quick dinner. Rich in flavor and easy to prepare, it's made in a pressure cooker or slow cooker, giving you flexibility in how you cook it. Here's how to make it:
Ingredients
- 2 pounds skinless, boneless chicken breast
- 1 (8 ounce) package cream cheese
- 1 (1 ounce) package ranch dressing mix
- cup water
- 6 slices cooked bacon, chopped
- 1 cup Cheddar cheese
Directions
Step 1: Place the chicken breasts and cream cheese into your multi-functional pressure cooker (such as an Instant Pot). Sprinkle the ranch dressing mix over the top and add the water.
Step 2: Close and lock the lid of the pressure cooker. Select high pressure and set the timer for 15 minutes. Allow 10 to 15 minutes for pressure to build before cooking begins.
Step 3: Once the timer goes off, release the pressure using the quick-release method, following the manufacturer's instructions. This should take about 5 minutes.
Step 4: Unlock and remove the lid. Take the chicken out of the pot and shred it with two forks. Return the shredded chicken to the pot.
Step 5: Set the pressure cooker to low heat. Add the shredded Cheddar cheese and chopped bacon to the pot. Stir to combine and heat through for about 2 to 3 minutes until the cheese melts and everything is well-mixed.
Cook's Note: If you are using a slow cooker instead, add the chicken, cream cheese, ranch seasoning, and water to the slow cooker. Cook on low for 6 hours, then shred the chicken and return it to the slow cooker. Stir in the Cheddar cheese and bacon and cook for an additional 2-3 minutes until well combined.

We really enjoyed this dish, but it tasted slightly too salty for our liking.
