Creole Broiled Catfish Recipe

Ingredients
- 8 catfish fillets (8 ounces each) or 4 whole dressed catfish (12-16 ounces each)
- 1/4 cup olive oil
- 1 tablespoon seasoned pepper
- 1 tablespoon garlic powder with parsley
- 1 tablespoon spicy seasoned salt
- Optional: substitute all three seasonings with 3 tablespoons Creole seasoning
Directions
Step 1: Prepare the Oven and Pan
Preheat your broiler to high and position the oven rack about 5 inches below the heating element. Line a broiler pan with aluminum foil for easy cleanup.
Step 2: Prepare the Catfish
Rinse the catfish fillets under cold running water and pat them dry with paper towels. Brush both sides generously with olive oil and place them in a single layer on the prepared broiler pan.
Step 3: Season the Fish
In a small bowl, mix together the seasoned pepper, garlic powder with parsley, and spicy seasoned salt. Sprinkle half of the mixture evenly over the top side of the fish.
Step 4: Broil the Catfish
Broil the fish for 5 minutes. Carefully turn each fillet over using a spatula, then sprinkle the remaining spice mixture on the other side. Continue broiling until the fish is opaque in the center, about 3-5 more minutes. For accuracy, the thickest part of the fish should reach 145F.
