Panko-Breaded Pork Parmigiana
Ingredients

- 4 (5 ounce) boneless, thin cut pork loin chops
- Salt and freshly ground black pepper to taste
- cup all-purpose flour
- 2 large eggs, beaten
- cup panko bread crumbs
- cup Parmesan cheese
- 2 teaspoons Italian seasoning
- 2 tablespoons olive oil
- 1 cup marinara sauce
- 3 ounces shredded mozzarella cheese
- 2 tablespoons minced fresh flat leaf parsley
Directions
Step 1: Preheat the oven to 400F (200C).
Step 2: Using a meat mallet, pound the pork chops to an even thickness of to inch. Season both sides generously with salt and freshly ground black pepper.
Step 3: In one shallow dish, place the flour. In another, beat the eggs. In a third dish, mix the panko breadcrumbs, Parmesan cheese, and Italian seasoning.
Step 4: Coat each pork chop by first dipping it in the flour, shaking off the excess. Then, dip it into the egg mixture, allowing any excess egg to drip off. Finally, coat the chop in the breadcrumb mixture and set aside on a plate.
Step 5: Heat the olive oil in a large skillet over medium-high heat. Once hot, fry the pork chops for 2 minutes on each side until golden brown. Remove from the skillet.
Step 6: Transfer the fried pork chops to a baking dish. Spoon cup of marinara sauce over each chop, then top with shredded mozzarella cheese.
Step 7: Bake in the preheated oven for 6-8 minutes, or until the sauce is heated through and the cheese is melted and bubbly.
Step 8: Remove from the oven and garnish with minced parsley before serving.
Cook's Note
I used Rao's marinara sauce for this recipe, but feel free to use your favorite brand or homemade sauce.

As someone who grew up in Iowa eating pork loin sandwiches--never even heard of a "Maid Rite," until decades later and found it disgusting in the land of succulent pork. I can say that nothing ever beats a pork cutlet. This is only one delicious way to gobble up these delicious bits of pig! Anyway, this recipe disappeared from our family table lightning fast!

I made this. I added extra sauce because we are a sauce eating family. I also used Italian panko crumbs so I didn’t need to add Italian seasoning. My husband seemed to enjoy and he’s not a big “Italian food fan.” I definitely would recommend it

Great recipe! Only thing I did that may have been a bit different was use a Cajun sauce that spiced it up very nicely. I used Fettucine (a nice heartier pasta) and garlic bread as sides.
