Million Dollar Green Beans Recipe
Green Beans with Bacon and Brown Sugar Glaze
Ingredients
- 6 slices bacon, coarsely chopped
- 1/2 cup finely chopped onion
- 3 cloves garlic, minced
- 1/3 cup packed brown sugar
- 3 tablespoons reduced-sodium soy sauce
- 2 (10 ounce) packages frozen whole or cut green beans, thawed and drained
- Crushed red pepper to taste (optional)
Directions
- Gather all the ingredients and have them ready for use.
- Heat a large skillet over medium heat and cook the chopped bacon until it becomes crispy, about 5 to 8 minutes.
- Using a slotted spoon or tongs, remove the cooked bacon from the skillet and place it on a paper towel-lined plate to drain excess fat.
- Drain most of the bacon grease from the skillet, leaving about 1 tablespoon of the drippings behind.
- Add the finely chopped onion and minced garlic to the skillet. Saut over medium heat until the onion becomes tender, stirring occasionally, for about 2 minutes.
- Stir in the brown sugar and soy sauce. Continue cooking over medium-low heat, stirring frequently, until the sauce begins to thicken, about 1 minute.
- Add the thawed and drained green beans to the skillet. Cook for another 5 minutes, or until the beans are tender and the sauce has formed a glaze-like consistency.
- Serve the beans hot, topped with crispy bacon pieces and, if desired, a sprinkle of crushed red pepper for an extra kick.

Origin of the Dish
The Million Dollar Green Beans recipe is a modern American side dish that has gained popularity due to its flavorful combination of sweet, salty, and savory ingredients. This dish is a creative take on the classic green beans, often associated with family gatherings, holiday meals, and potlucks. While the exact origin of this specific recipe is unknown, it is likely inspired by the growing trend of adding rich, indulgent sauces and toppings to simple vegetables to elevate their flavor profile. The dish has become a beloved addition to dinner tables, particularly in the southern United States, where both green beans and bacon are common ingredients in everyday meals.
Regional Variations
In the United States, green beans are often used in traditional southern dishes, such as "Green Beans Almondine" or "Southern Style Green Beans" with ham. The Million Dollar Green Beans recipe, however, stands out because of the unique combination of soy sauce, brown sugar, and baconingredients that evoke a sweet and salty profile. While this dish does not have a specific regional origin, it has become particularly popular in the South due to the use of bacon and the sweet glaze. Additionally, some people may add different spices or use fresh green beans instead of frozen, depending on local preferences and availability.
What Sets This Dish Apart
Million Dollar Green Beans differ from similar green bean recipes in several ways. Unlike traditional green bean casseroles, which often include cream of mushroom soup or cheese, this dish relies on a simple glaze made from brown sugar, soy sauce, and bacon drippings. This combination creates a distinct balance of sweet and savory flavors, elevating the humble green bean into a rich and flavorful side dish. The addition of crispy bacon on top adds texture and a salty crunch, which contrasts beautifully with the tender beans and the sweet sauce.
Where It's Served
Million Dollar Green Beans are commonly served as a side dish at dinner parties, family gatherings, and holiday meals. They pair well with a variety of main courses, such as roasted chicken, steak, or fish. The dish is also popular in southern cuisine and can often be found at potlucks and church socials. Due to its richness and indulgent flavors, it is particularly well-suited for special occasions like Thanksgiving, Christmas, or Easter, where it can complement other hearty dishes like mashed potatoes and cornbread.
Fun Facts
- Though "Million Dollar" might sound like an extravagant name, it refers to the rich, indulgent flavor of the dish that makes it feel like a special treat.
- While bacon is a staple in many Southern dishes, Million Dollar Green Beans are often served alongside more luxurious meals to balance the richness of other foods.
- In some variations of the dish, crushed red pepper is added to provide a spicy kick, giving the beans an extra layer of complexity.
- Some cooks like to use fresh green beans rather than frozen, which can give the dish a slightly different texture and flavor.
Conclusion
Million Dollar Green Beans are a perfect example of how a few simple ingredients can be transformed into something extraordinary. With their sweet and salty glaze, crispy bacon topping, and tender green beans, they make for a memorable side dish that can easily become the star of any meal. I followed the recipe as written using fresh green beans (with the exception of substituting onion for shallot since it's all I had on hand) and it turned out decent. The sauce didn't really thicken up so I was a little disappointed about that, but the flavors were excellent. I ended up cooking the green beans a bit longer than stated for about 8-10 minutes instead of just 5 (I didn't see that someone suggested blanching them beforehand), and they turned out perfectly crunchy as my family and I prefer our cooked veggies only slightly softened anyway. The bacon added a nice salty finish to the overall sweetness of the dish, and I loved the different crunchy textures that came together in the end. I did omit the red pepper because I thought my toddler would be eating them (she didn't) but I will be adding it next time since my husband and I love spicy. I served these along side a steak dinner. Great recipe for adding more veggies to a meal!

These green beans are wonderful! The sauce reminds me of what fine dining restaurants serve on Brussels sprouts. I’ll definitely be making these again!

Hard to believe that these are frozen green beans. I really like the sweet-salty combo, and that little bit of soy sauce really kicks in some different flavor. With green beans in the freezer and the other ingredients always in my pantry, this is a quick side dish that will be a go-to for me. It’s a no-brainer.
