Pork Chops with Apples, Onions, and Sweet Potatoes Recipe

Ingredients

  • 4 pork chops
  • Salt and pepper to taste
  • 2 onions, sliced into rings
  • 2 sweet potatoes, sliced
  • 2 apples, peeled, cored, and sliced into rings
  • 3 tablespoons brown sugar
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon salt

Directions

  1. Preheat the oven to 375F (190C).
  2. Season the pork chops with salt and pepper to taste. Arrange them in a medium oven-safe skillet.
  3. Top the pork chops with sliced onions, sweet potatoes, and apples.
  4. Sprinkle everything with brown sugar, then season with 2 teaspoons of black pepper and 1 teaspoon of salt.
  5. Cover the skillet and bake for 1 hour in the preheated oven, or until the sweet potatoes are tender and the pork chops reach an internal temperature of 145F (63C).

If I could give this more than 5 stars I would - but that was on my second try. The first try was a bit of a disaster but still tasted terrific. I'd like to pass on what I learned: The amount of ingredients were on the mark, except for the pepper. 1)make sure you slice the onion and sweet potatoes very thin - they will then cook within the hr. 2) Cut the apples thicker - not too thick - since they take a shorter amt of time to cook (if too thin they will turn to mush) 3) Use the "GRANULATED" brown suger (I used the old fashioned kind the first time and it wouldn't melt - the pepper got stuck in the sugar - I had to mush in down - not a pretty sight!). I also cut back on the pepper the second time - we love pepper, especially on sweet potatoes but found that 1 tsp. was sufficient). I cooked this in a corningware baking dish with cover and the second time it was a pretty presentation and everyone loved it. It is fun and easy to prepare. One pork chop per serving is not enough in my house!!! Believe it or not - it is a light meal. You might want to serve a salad with it since some were looking for a third chop! The pork really picks up the juices while it is cooking. This is a keeper and a really quick meal - thanks Ashbeth.

I didn't see that anyone else had suggested this, but I did this recipe in my slow-cooker. I put the sweet potatoes on the botom, since they take the longest. Then I put a layer of onions and apples, then the chops, then another layer of onion and apples. On each layer i lightly dusted with salt and pepper and then sprinkled with a brown sugar/cinnamon/nutmeg mix - probably used double-triple the amt of brown sugar called for. I cooked it on medium for about 5 1/2 hours. It turned out GREAT. The pork really soaked in the flavor since it was sandwiched between the onion and apples(used golden delicious, by the way, sliced thick, and the texture was perfect). The flavor of this was perfect for an autumn evening - I love this combination!

A nice early autumn meal! A great base recipe. Can be spiced up to suit different tastes. I browned the chops in olive oil in the cast iron skillet prior to adding the rest of the ingredients. Also sprinkled cinnamon on top and dotted with a little butter. Covered with foil and cooked in the Breville Smart Oven Air, using convection, at 350 degrees for 45 minutes. Delicious!

Was so tasty! Followed the suggestion of a few reviews and only did a tsp of pepper on the apples, sweet potatoes, and onions. Also, I cut the onions and sweet potatoes very thin so that they would cook in an hour. I mixed all of the toppings in a large bowl with the brown sugar, salt, and pepper, and mixed it all together before topping the pork chops.

Loved it. I used boneless pork chops, Fuji apples (unpeeled), steamable sweet potatoes (unpeeled) and breaded onion rings. Stove top first, then in the oven. didn't use brown sugar. used just a little salt and pepper. Very good and onion rings added enough salt and added crunch.

I gave this recipe five stars after my husband told me "this is a winner." I followed the advice of one review by replacing the 1/2 cup of water with apple cider. I placed the apple cider and spices along with the sliced sweet potatoes and apples in a bowl to mix well. I also dredged the chops in flour and browned in a skillet before placing in the oven. The chops were so tender and tasty. I will definitely keep this recipe in my favorites.

I followed another reviewers suggestion about cooking sweet potatoes in microwave for 2 min... good idea. I also followed another suggestion about whisking together some balsamic, mustard, brown sugar and I added a little bit of chick broth. Poured over casserole, covered and baked... yum! Would make again but would season the sweet potatoes with S &P and rosemary before combining in pan.

I used my dutch oven which I love. First browned my chops and steamed the sweet potatoes a bit to soften them up. I used McCormick's Garlic and herb instead of the black pepper. I also poured apple cider, as someone else suggested, over the mixture and cooked for 45 minutes (sufficient to cook chops).

From the photo, I thought the chops needed a little more color. I fried one slice of bacon, cut into pieces, added turmeric to the seasoning, and browned the chops in an iron skillet. Added the vegetables, sprinkled the remaining seasoning on top and popped it in the oven for one hour. Perfect!

ABSOLUTELY WONDERFUL! Even our son and daughter-in-law who do not like sweet potatoes loved this dish and she wants the recipe...and our 13m old grandson ate about 1/3 of the sweet potatoes too! They all loved the apples and my whole family enjoyed the onions and cinnamon and brown sugar except the baby didn't care for the actual onion pieces, but no big deal for he devoured all the rest! Everyone thought the pork loin mini roast was perfect. I used what I had on hand, which was purchased pre-seasoned with hickory bacon and brown sugar. Wrapped turkey bacon slices around the loin, just a few to complement its seasoning. But ANY pork would do fine, I'm confident. Then I added some salt and a just a tad of pepper and some cinnamon to the veggies as directed. Cooked the potatoes on the stove a few minutes first, patted off excess water and threw them in with the other veggies to season. Arranged around pork. THANK YOU FOR THIS UNIQUE, SCRUMPTIOUS RECIPE! I used a lot less pepper as others said, and although the potatoes and onions and apples were good, the pork chops were dry. Maybe would be better if I seared them briefly and then took them out of the oven sooner?

I didn't think the sweet potatoes tasted very good cooked this way with the pork chops and onions. I did cook it for over an hour, but the potatoes never got soft and delicious. The apples and onions were a nice combination, but next time I will for sure roast the potatoes separately

When I started making this recipe, I thought a combination of onions, apples, and sweet potatoes might not be that great. But it was good! I made it exactly per instructions, except I baked it on 325 for and hour and a half. It was very tender and sweet. It's not one I love, but one I like. I will make it again, but add more apples.

I really liked the tender pork chop {and I did use an extra thick chop from Butcher Box} with the sweetness of the apple and sweet potato. I would cut the pepper down to a dash or two. Way too peppery for me but I will make again. I'll try different spices like smoked paprika with garlic powder.

Delicious!!! The only change I made was omitting 1 of the teaspoons of pepper as others have said. This is a winner!
